Description

A crisp, zesty uncooked salad condiment made from diced ripe tomatoes, onions, scallions, and fresh lime juice.

Presentation & How It's Eaten

Served cold or at room temperature as an essential side accompaniment to virtually every Malagasy rice dish or grilled meat.

Ingredients

  • 4 large ripe Roma tomatoes, finely diced

  • 1 small red or white onion, finely diced

  • 3 green onions, finely chopped

  • 1 fresh red chili (pili-pili), finely minced (optional)

  • 2 tbsp fresh lime juice

  • 1 tbsp peanut oil or vegetable oil

  • Salt, to taste

Step-by-Step Directions

  1. Combine Vegetables: In a medium bowl, combine diced tomatoes, diced onion, and chopped green onions.

  2. Add Heat: Mix in minced red chili if desired for a spicy kick.

  3. Dress: Pour fresh lime juice and vegetable oil over the vegetables.

  4. Season & Rest: Season with salt, toss gently, and let sit for 10 minutes at room temperature before serving to allow flavors to meld.

Optional

  • Ginger Zing: Add 1/2 tsp of finely grated fresh ginger to the dressing.

Cooking Tips

  • Use firm, ripe tomatoes to prevent the relish from becoming overly watery while resting.
