Description
Slow-braised beef roast seasoned simply with salt and garlic, pulled into delicate strands and pan-fried until crisped.
Presentation & How It's Eaten
Served hot over plain boiled rice alongside a small bowl of spicy tomato-ginger relish.
Ingredients
2 lbs beef chuck roast or brisket
5 cloves garlic, crushed
2 tbsp vegetable oil or lard
1.5 tsp sea salt
3 cups water
Step-by-Step Directions
Braise Beef: Place beef roast in a heavy pot with water, crushed garlic, and salt. Bring to a boil, reduce heat to low, cover, and cook for 2 hours until beef falls apart.
Shred: Remove beef from pot and shred finely using two forks. Reserve remaining pan juices.
Crisp: Heat oil in a skillet over medium-high heat. Add shredded beef and fry, stirring occasionally, until edges are golden and crispy.
Finish: Splash 2–3 tablespoons of reserved braising broth over crispy beef right before removing from heat.
Optional
Zesty Lime: Squeeze a fresh lime wedge over crisp shredded meat prior to serving.
Cooking Tips
Ensure beef is boiled until extremely tender so it easily shreds into thin, delicate strands.
