Description
A fragrant home-style chicken stew dominated by warm, pungent fresh ginger, crushed garlic, and sweet tomatoes.
Presentation & How It's Eaten
Served hot family-style in a bowl alongside sticky or steamed white rice and fresh cucumber slices.
Ingredients
2 lbs chicken thighs and drumsticks, bone-in
2-inch piece fresh ginger, peeled and julienned
4 cloves garlic, minced
2 ripe tomatoes, diced
1 yellow onion, chopped
2 tbsp vegetable oil
1.5 cups water or chicken broth
Salt and black pepper, to taste
Step-by-Step Directions
Brown Chicken: Season chicken pieces with salt and pepper. Heat oil in a heavy pot over medium-high heat and sear chicken until browned on both sides. Remove and set aside.
Sauté Aromatics: In the same pot, add onions, garlic, and julienned ginger. Cook for 3–4 minutes until soft and aromatic.
Simmer: Stir in diced tomatoes and cook for 2 minutes. Return chicken to the pot, pour in water/broth, and bring to a simmer.
Reduce: Cover and simmer on low heat for 25–30 minutes until chicken is fully cooked and sauce reduces.
Optional
Coconut Twist: Add 1/2 cup of coconut milk in the last 10 minutes of cooking for extra richness.
Cooking Tips
Use bone-in, skin-on chicken cuts to build a deeper, richer broth base.
