Description

Salatat Dakwa is an iconic, deeply popular Sudanese peanut salad that balances rich, nutty flavors with bright, acidic highlights. It centers around dakwa (traditional Sudanese peanut paste), which is such a cornerstone of the local diet that peanuts are colloquially known across much of the Arabic-speaking world as "Sudanese beans."

Presentation & How It's Eaten

This dish takes the form of a thick, savory, and intensely tangy dip speckled with finely diced, colorful raw vegetables. It is typically served at room temperature in a shallow bowl. It functions as a versatile accompaniment on a Sudanese dining tray, heavily complementing fried meats, grilled poultry, or oven-cooked dishes, and is scooped up cleanly with pieces of flatbread.

Ingredients

  • 6–8 tbsp peanut butter or cooking peanut paste (dakwa)

  • 100ml water (to thin the paste)

  • 2 tomatoes, diced (keep the juices)

  • 1 red onion, finely chopped

  • 1 green pepper, diced

  • 1 lime, juiced

  • 1 tbsp malt vinegar

  • 3–4 tbsp olive oil

  • Salt and pepper, to taste

Step-by-Step Directions

  1. Soften the Peanut Paste: Add the 6 to 8 tablespoons of smooth or crunchy peanut butter to a mixing bowl.

  2. Smooth the Base: Pour in the 100ml of water and let it sit undisturbed for about one minute. Whisk or stir vigorously until it incorporates into a completely smooth, velvety paste.

  3. Incorporate the Vegetables: Add the diced tomatoes (along with any water/juice from the cutting board), the diced green pepper, and the finely chopped red onion directly into the peanut base.

  4. Dress the Salad: Pour in the malt vinegar, olive oil, and the lime juice. Season generously with salt and pepper to taste.

  5. Emulsify and Adjust: Stir the mixture thoroughly until completely even. Taste the salad and, if necessary, re-add any of the seasoning ingredients to achieve your preferred balance of consistency and tanginess before serving.

Optional

  • Authentic Oil Swap: Substitute the olive oil with aromatic sesame oil for a more traditional, deeply authentic Sudanese flavor profile.

  • Milder Onion Flavor: Swap out the sharp red onion for a bundle of finely chopped spring onions (scallions).

  • Sweet Notes: Toss finely grated or minced carrots into the vegetable mix to introduce an extra crunch and a subtle sweetness.

  • Textural Switch: Use unrefined local cooking peanut paste instead of store-bought commercial peanut butter.

Cooking Tips

  • Control the Tang: When adding the lime, squeeze in half the lime first, mix it through, and taste. Only add the remaining half if you want a sharper citrus kick.

  • Balancing a Heavy Hand: If you accidentally make the salad too tangy or sour from the lime and vinegar, don't worry. You can easily bulk out the sauce and cancel out the over-reaches of acidity by whisking in a small splash of water and an extra tablespoon of peanut butter.
