Korea’s classic summer dessert consisting of fluffy shaved ice topped with sweet red bean paste (pat), chewy mini rice cakes (injeolmi), condensed milk, and roasted soybean powder.

Presentation & How It's Eaten

Piled high in a chilled bowl. Eaten with long spoons, mixing toppings into shaved ice as you eat to create a slushy, sweet treat.

Ingredients

  • 4 cups finely shaved ice (or frozen milk shaved)

  • 3/4 cup sweetened red bean paste (pat)

  • 1/2 cup mini rice cake bits (injeolmi or tteok)

  • 3 tbsp sweetened condensed milk

  • 2 tbsp roasted soybean powder (konggaru)

  • 1/4 cup canned fruit cocktail or fresh berries (optional)

Step-by-Step Directions

  1. Shave Ice: Shave ice into a fine, fluffy snow texture using an ice shaver machine into a large cold bowl.

  2. Layer Red Bean: Spoon sweetened red bean paste directly onto top center of shaved ice.

  3. Add Rice Cakes & Fruit: Scatter mini rice cake bits and fruit around base of red bean pile.

  4. Drizzle & Dust: Drizzle condensed milk over entire ice mountain and dust generously with roasted soybean powder. Serve immediately with long spoons.

Cooking Tips

  • Freeze Milk for Base: Freeze whole milk mixed with condensed milk in ice molds before shaving to create an extra creamy "snow milk" ice base (Uyu-bingsu).
