Prep Time: 10 minutes

Total Time: 15 minutes (plus 3 hours freezing time)

Servings: 4

Origin

  • Region: Sicily

  • Historical Context: Descended from the Arabic sherbet, which was originally made during medieval times by mixing fresh snow harvested from Mount Etna with sweet fruit juices and floral essences.

Description

A semi-frozen, icy dessert with a distinctly smooth, crystal-fine texture that lies beautifully between Italian gelato and crushed shaved ice, most famously flavored with intense lemon juice, local almonds, or espresso coffee.

Presentation

Served in clear glassware accompanied by a large spoon. In eastern Sicily, it is the ultimate summer breakfast staple, always paired with a warm, fluffy, egg-glazed sweet yeast bun called Brioche col Tuppo.

Ingredients

  • 500ml water

  • 150g granulated sugar

  • 250ml freshly squeezed, strained juice from organic Sicilian lemons

Step-by-Step Directions

  1. Make Syrup: In a saucepan, combine the water and granulated sugar. Bring to a boil over medium heat, stirring constantly for 2–3 minutes until the sugar dissolves completely into a clear simple syrup.

  2. Cool: Remove the syrup from the stove and let it cool completely down to room temperature.

  3. Mix: Stir the freshly squeezed and strained lemon juice thoroughly into the cooled simple syrup.

  4. Pour: Transfer the liquid mixture into a shallow stainless steel pan or a glass baking dish to maximize the surface area.

  5. Freeze and Stir: Place the dish uncovered into the freezer. Every 30 minutes for the next 3 hours, take the dish out and use a fork to scrape and break up the forming ice crystals, moving them from the outer edges into the center.

  6. Fluff and Serve: Once the mixture has turned entirely into a fluffy, snowy mass of micro-crystals, scrape it one final time with your fork and spoon it immediately into cold glasses.

Optional Variations

  • Granita al Caffè con Panna: A highly popular Roman and Sicilian breakfast variation made with dark espresso and finished with a mountain of fresh, unsweetened whipped cream on top.

Cooking Tips

  • Do not leave the mixture unattended in the freezer without stirring. If you forget to scrape it with the fork every 30 minutes, it will freeze solid into a hard block of lemon ice instead of a flaky, delicate granita.
