Presentation & How It's Eaten
Sliced into thick swirl pinwheels, served hot as a side dish or sweet dessert topped with toasted buttered breadcrumbs.
Ingredients
Dough: 2 cups all-purpose flour, 1 egg, 1/2 cup warm water, 1 tbsp oil, 1/2 tsp vinegar
Filling: 1.5 cups cottage cheese or cottage curd
1/2 cup sour cream
1 egg
1/2 cup fresh tarragon leaves, chopped
1/3 cup sugar (for sweet version)
4 tbsp butter and 1/2 cup breadcrumbs (for topping)
Step-by-Step Directions
Make Dough: Knead flour, egg, warm water, oil, and vinegar into a smooth dough. Rest covered for 30 minutes.
Make Filling: Mix cottage cheese, sour cream, egg, chopped fresh tarragon, and sugar together in a bowl.
Roll & Stretch: Roll dough thin on a floured cloth, then gently stretch with hands until tissue-thin.
Fill & Roll: Spread tarragon cheese filling over dough. Roll up tightly into a long log using the cloth underneath. Wrap log in cheesecloth or foil and tie ends.
Steam/Boil: Simmer wrapped log in boiling water for 30 minutes. Unwrap, slice into round pinwheels, and top with golden buttered breadcrumbs.
Optional
Walnut Filling: Replace tarragon with ground walnuts for a popular variant.
Cooking Tips
Fresh Tarragon: Use fresh green tarragon leaves; dried tarragon lacks the fragrant anise flavor necessary for this dish.
