Origin
Region: Tuscany (Florence)
Historical Context: Invented during the 16th century by the famous Renaissance architect Bernardo Buontalenti for a royal Medici banquet. Its distinct shape was originally molded inside a soldier’s helmet (zuccotto).
Description
A stunning, dome-shaped semifreddo dessert. The outer shell is formed from wedges of light sponge cake soaked in crimson Alchermes liqueur, holding an airy filling of whipped cream, ricotta, dark chocolate chunks, and roasted nuts.
Presentation
Inverted onto a platter, sliced into wedges revealing the striking red and white interior contrast, and served chilled.
Ingredients
1 large round sponge cake (Pan di Spagna), sliced into 1/2-inch thick wedges
100ml Alchermes liqueur (or a mix of sweet Marsala and rum)
400ml heavy whipping cream
150g powdered sugar
200g fresh ricotta, drained
50g dark chocolate, chopped into rough chunks
50g toasted hazelnuts or pistachios, chopped
Step-by-Step Directions
Line Bowl: Line a deep 2-quart metal or glass dome bowl tightly with a double layer of plastic wrap, leaving plenty of overhang.
Arrange Shell: Dip the wedges of sponge cake quickly into the red Alchermes liqueur. Line the entire interior surface of the bowl with the red cake slices, packing them closely together so no gaps remain.
Mix Light Cream: Whip the heavy cream and powdered sugar to stiff peaks. Split the whipped cream into two separate bowls.
Flavor Filling: In the first bowl, fold in the sieved ricotta, chopped dark chocolate chunks, and hazelnuts. Fill the cake-lined dome halfway with this dark mixture.
Add Center: In the second bowl of cream, fold in a tablespoon of cocoa powder or leave it white. Pack this into the remaining center cavity of the dome.
Seal and Freeze: Cover the exposed top with remaining soaked sponge cake slices. Fold the plastic wrap over the base, weigh it down with a flat plate, and freeze for at least 8 hours before inverting and slicing.
Optional Variations
Zuccotto al Gelato: A modern variation where the internal whipped cream filling is completely substituted with alternating layers of hazelnut and chocolate Italian gelato.
Cooking Tips
Alchermes is the non-negotiable ingredient that gives Zuccotto its historical signature flavor and brilliant pinkish-red color. If you cannot find it, use a mixture of rum and pomegranate juice to mimic the color and spice.
