Description
Velouté de Châtaignes is a velvety, comforting French autumn classic. Roasted sweet chestnuts are simmered gently with aromatic shallots, celery, and chicken stock, then puréed to a perfectly smooth, silk-like consistency. It is enriched with crème fraîche and finished with a luxurious drizzle of white or black truffle oil, balancing earthy, sweet, and savory elements.
Presentation & How It's Eaten
Served warm in shallow soup plates. For a restaurant-quality look, garnish the soup with a swirl of liquid crème fraîche, a few pan-fried sliced chestnuts, and a light drizzle of truffle oil. It is eaten as an elegant starter for holiday or cool-weather dinners.
Ingredients
500g (1.1 lbs) vacuum-packed or jarred roasted chestnuts, peeled (reserve 4-5 chestnuts for garnish)
40g (3 tbsp) unsalted butter
2 large shallots, finely chopped
1 celery stalk, finely chopped
1 liter (4 cups) low-sodium chicken or vegetable stock
120 ml (1/2 cup) heavy cream or crème fraîche (plus more for serving)
A pinch of ground nutmeg
White or black truffle oil (for drizzling)
Salt and freshly ground white pepper
Step-by-Step Directions
Sauté the Aromatics: Melt the butter in a medium Dutch oven over medium heat. Add the chopped shallots and celery. Sauté for 5 to 6 minutes until soft and translucent, making sure they do not brown.
Simmer the Chestnuts: Add the roasted, peeled chestnuts to the pot, saving a few for garnish. Pour in the chicken stock and bring to a boil. Reduce the heat to low, cover, and let simmer gently for 20 minutes until the chestnuts are extremely soft and crumbly.
Purée until Silky (The Secret): Transfer the soup carefully to a high-powered blender. Blend on high speed for 2 minutes until it becomes an exceptionally smooth, uniform, and light cream.
Return and Enrich: Pour the puréed velouté back into the pot over low heat. Whisk in the heavy cream (or crème fraîche) and a pinch of ground nutmeg. Heat through gently for 3 to 4 minutes (do not boil). Season with salt and white pepper.
Prepare the Garnish: Slice the reserved chestnuts thinly. Sauté them quickly in a small pan with a touch of butter until lightly browned and crisp.
Assemble: Ladle the warm velouté into bowls. Top with a few toasted chestnut slices, a light swirl of crème fraîche, and a delicate drizzle of truffle oil.
Optional
Smoky Bacon: Render diced bacon in the pot before cooking the shallots, and garnish the finished soup with crispy bacon bits.
Cognac Splash: Add 2 tablespoons of Cognac to the sautéed shallots and let it reduce before adding the stock for a deeper warming flavor.
Cooking Tips
Use Vacuum-Packed Chestnuts: Peeling fresh chestnuts is labor-intensive and tedious. High-quality vacuum-packed, pre-roasted French chestnuts are readily available and save substantial prep time without sacrificing flavor.
The Blender Rule: A high-speed blender produces a much finer, silkier emulsion for a velouté than a standard immersion blender.
