1 large egg
1 cup ice-cold water
Vegetable oil, for frying

Prepare Vegetables: Dry all sliced vegetable pieces thoroughly with paper towels.
Make Batter: Whisk egg and ice-cold water together. Add flour and stir gently with chopsticks just until combined (do not overmix; lumps are fine).

Dip & Fry: Dip vegetable pieces into cold batter and drop into hot oil. Fry in batches for 2–3 minutes until light gold. Drain on paper towels.

Cooking Tips
Keep batter ingredients cold—use ice water and avoid overmixing to limit gluten formation for a light, crispy crunch.
