Description

Brazilian Torta de Limão features a buttery biscuit crust filled with a creamy condensed milk lime filling and topped with fluffy toasted meringue.

Presentation

Garnish meringue peaks with freshly grated lime zest before serving chilled slices.

Ingredients

Crust:

  • 7 oz (200 g) Maria cookies or graham crackers

  • 6 tbsp unsalted butter, melted

Lime Filling:

  • 1 can (14 oz / 397 g) sweetened condensed milk

  • 1/2 cup fresh lime juice

  • 1 tbsp lime zest

Meringue Top:

  • 3 large egg whites

  • 1/2 cup granulated sugar

Directions

  • Pulse cookies in a food processor into fine crumbs, combine with melted butter, and press into a 9-inch pie dish.

  • Bake crust at 350°F (175°C) for 8 to 10 minutes; cool completely.

  • Whisk condensed milk, lime juice, and lime zest together until mixture thickens naturally from citrus acid.

  • Pour lime filling into cooled cookie crust.

  • Beat egg whites in a bowl on high speed, gradually adding sugar until stiff glossy peaks form.

  • Spread meringue over lime filling and swirl into decorative peaks.

  • Toast meringue under oven broiler for 1 to 2 minutes or use a kitchen torch until lightly browned.

  • Chill pie in refrigerator for 3 hours before slicing.

Optional Variations

  • Passion Fruit Pie: Substitute lime juice with concentrated passion fruit juice.

  • Whipped Cream Top: Top with sweetened whipped cream instead of baked meringue.

Cooking Tips

  • No baking needed for lime filling; acid in lime juice naturally thickens sweetened condensed milk.

  • Keep a close eye on meringue under the broiler to avoid burning.
