  • Country of Origin: Brazil

  • Description: Naturally gluten-free crepes made from hydrated tapioca starch poured onto a hot dry skillet, fusing instantly into a chewy flatbread that is filled and folded.

  • Presentation & How It's Eaten: Folded in half like a taco or crepe, served warm on a plate for breakfast or light snack.

  • Ingredients:

    • 2 cups hydrated tapioca starch (massa pronta para tapioca)

    • 1 pinch of salt

    • 1 cup shredded mozzarella cheese or grated coconut

    • 2 tbsp butter (for spreading)

  • Step-by-Step Directions:

    • Sift Starch: Sift hydrated tapioca starch through a fine sieve into a bowl; stir in a pinch of salt.

    • Heat Pan: Heat a non-stick skillet over medium-low heat without oil or butter.

    • Spread Starch: Evenly sift 1/2 cup of starch onto pan, spreading into an even 6-inch circle.

    • Cook Flatbread: Cook for 1–2 minutes as heat binds starch into a solid crepe; flip and cook for 30 seconds on second side.

    • Fill & Fold: Add shredded cheese or desired filling on one half, fold crepe over, let cheese melt for 30 seconds, brush top with butter, and serve hot.

  • Optional: Fill with condensed milk and shredded coconut for a classic sweet version (Tapioca Doce).

  • Cooking Tips: Keep skillet on medium-low heat; grease is not required as starch binds together purely via steam.
