Description

The quintessential home-cooked Chinese dish that every household makes. It is a gloriously simple yet deeply comforting stir-fry combining pillowy, ultra-soft scrambled eggs with juicy, caramelized tomato wedges that break down into a naturally sweet and savory gravy.

Presentation & How It's Eaten

Served home-style in a shallow dish, shimmering with vibrant contrasting red and yellow hues, finished with a scatter of emerald-green scallion flecks. It is universally scooped over steaming hot bowls of plain white rice.

Ingredients

  • 4 large fresh eggs

  • 3 medium ripe vine tomatoes (cut into wedges)

  • 2 scallions (cut into 1-inch lengths, greens and whites separated)

  • 2 cloves garlic (thinly sliced)

  • 3 tbsp vegetable oil (divided)

Egg Seasoning:

  • 1/2 tsp salt

  • 1/4 tsp ground white pepper

  • 1 tsp Shaoxing rice wine (optional)

  • 1 tsp water (makes the eggs fluffier)

The Sauce Adjustments:

  • 1 tsp granulated sugar (crucial to balance tomato acidity)

  • 1 tbsp ketchup (optional, for color and depth)

  • 1/4 cup water

  • 1/2 tsp sesame oil

Step-by-Step Directions

  1. Beat Eggs: Crack the eggs into a bowl, add the salt, white pepper, Shaoxing wine, and 1 teaspoon of water. Whisk vigorously for a full minute until completely uniform and frothy.

  2. Scramble Low & Slow: Heat 2 tablespoons of oil in a wok over medium-high heat. When hot, pour in the eggs. Let them expand for 5 seconds, then use your spatula to gently push the cooked outer edges toward the center. As soon as the eggs are 80% set but still soft, runny, and curd-like, chop them into large chunks with your spatula and empty them back into the bowl. Do not overcook!

  3. Cook Aromatics: Add the remaining 1 tablespoon of oil to the same wok. Drop in the garlic slices and the white parts of the scallions. Stir fry over medium heat for 20 seconds until you can smell them.

  4. Blister Tomatoes: Toss the tomato wedges into the hot wok. Crank the heat to high and stir fry for 2 minutes until the skins begin to wrinkle and loosen, and the tomatoes start releasing their natural juices.

  5. Simmer into a Gravy: Pour in the 1/4 cup of water, sugar, and ketchup (if using). Bring to a simmer, lower the heat to medium, and cover the wok with a lid for 2 minutes. This breaks down the tomatoes into a rich, luscious, chunky red sauce.

  6. Recombine: Remove the lid, tip the soft scrambled eggs and all their juices back into the pan along with the scallion greens. Toss gently for 30 seconds so the egg pillows absorb the sweet tomato gravy. Turn off the heat, stir in the sesame oil, and serve over rice.

Cooking Tips

  • Choosing Tomatoes: Ripe, juicy vine tomatoes are mandatory here. If your tomatoes are a bit firm or out of season, adding a tablespoon of ketchup acts as a savior to bring out that deep, nostalgic umami base.
