A satisfying landlocked dish featuring beef chuck simmered in a savory roasted peanut paste sauce with sweet potatoes and tomatoes, reflecting regional Central African traditions.

Presentation

Ladle over steamed white rice or serve with boiled cassava.

Ingredients

  • 800 g beef stew meat, cut into bite-sized cubes

  • 1/2 cup unsweetened smooth peanut butter

  • 1 yellow onion, chopped

  • 2 tomatoes, diced

  • 2 tbsp vegetable oil

  • 1 large sweet potato, peeled and cubed

  • 3 cups warm beef stock

  • 2 cloves garlic, minced

  • 1 tsp salt

  • 1/2 tsp cayenne pepper

Directions

  • Heat vegetable oil in a pot and sear beef cubes on medium-high heat until browned.

  • Add chopped onion and garlic; cook for 4 minutes until softened.

  • Stir in diced tomatoes and cook until softened.

  • Whisk peanut butter into warm beef stock until smooth, then pour mixture into pot.

  • Add cubed sweet potato and cayenne pepper; bring stew to a boil.

  • Lower heat, cover pot, and simmer for 45 minutes until beef and sweet potatoes are tender.

  • Adjust salt seasoning and serve hot.

Optional Variations

  • Swap beef for chicken thighs or smoked turkey.

Cooking Tips

  • Stir sauce periodically during simmering to prevent peanut butter from settling and scorching at bottom of pot.
