Description

The ultimate symbol of family warmth and Chinese New Year celebration. Soft, comforting, home-rolled dough wrappers are packed tight with an incredibly juicy, aromatic filling of seasoned ground pork, minced Chinese garlic chives, and ginger, boiled rapidly to plump perfection.

Presentation & How It's Eaten

Served piping hot in a rustic, steaming pile on a large communal platter. Diners pick up individual dumplings with chopsticks, plunge them into a personal side bowl of black vinegar and chili oil, and eat them whole.

Ingredients

  • 24 round dumpling wrappers (thick, Northern-style flour wrappers)

  • 300g (10.5 oz) ground pork (preferably 80% lean, 20% fat)

  • 1.5 cups Chinese garlic chives (Jiucai, finely minced)

  • 1 tbsp fresh ginger (finely grated)

  • 2 cloves garlic (finely minced)

The Filling Seasoning:

  • 1.5 tbsp light soy sauce

  • 1 tbsp Shaoxing rice wine

  • 1/2 tsp fine salt

  • 1/4 tsp ground white pepper

  • 1 tbsp pure toasted sesame oil

  • 3 tbsp chicken stock or water (beaten into the meat)

Step-by-Step Directions

  1. Beat the Meat filling: Place the ground pork into a large bowl along with the grated ginger, garlic, light soy sauce, Shaoxing wine, salt, and white pepper. Pour in the 3 tablespoons of chicken stock or water. Using a wooden spoon or chopsticks, stir vigorously in one single direction for 3 minutes until the pork turns sticky, pasty, and absorbs all liquid. Stir in the sesame oil.

  2. Fold in Chives: Add the finely minced Chinese garlic chives directly into the seasoned pork mixture, folding gently until evenly distributed.

  3. Assemble: Lay a dumpling wrapper flat on your palm. Scoop 1 tablespoon of the pork filling into the exact center.

  4. Pleat and Seal: Dip your finger in water and moisten the outer rim of the wrapper. Fold the wrapper over into a half-moon shape. Pinch the center top edges together tightly. Create 3–4 neat pleats on the side facing you, pressing them firmly into the back flat edge to seal the dumpling shut completely with no air pockets. Repeat for all.

  5. Boil (The Three-Water Method): Bring a very large pot of water to a rolling boil. Drop the dumplings in gently, stirring with the back of a ladle to prevent sticking.

  6. Plump: Once the water boils vigorously again and the dumplings float, pour in 1/2 cup of cold water (this slows down the boil so the interior meat cooks through before the skin tears). Repeat this step twice more when the water hits a boil again. When they puff up plumply after the third boil, fish them out with a slotted spoon and plate.

Cooking Tips

  • The One-Direction Stir: Always stir your dumpling meat filling in a single direction. This technique develops the myosin proteins in the pork, binding the meat fibers into a unified texture that effectively traps all the internal juices, ensuring a bursting mouthfeel when bitten.
