Description

A dramatic and airy dessert that rises high above the rim of its baking dish. It combines a rich chocolate base with stiffly beaten egg whites, creating an intensely chocolate flavor with a delicate texture that melts away instantly on the tongue.

Presentation & How It's Eaten

Served immediately straight from the oven while it is still fully puffed. A small opening is often poked into the center at the table to pour in vanilla cream or chocolate sauce.

Ingredients

  • 120g high-quality dark chocolate (chopped)

  • 40g butter (plus extra for preparing ramekins)

  • 30g all-purpose flour

  • 150ml whole milk

  • 4 large eggs (separated)

  • 50g granulated sugar

  • 1 pinch of salt

Step-by-Step Directions

  1. Prepare Ramekins: Coat 4 ramekins with softened butter, brushing in vertical upward strokes. Coat the inside with granulated sugar, tapping out any excess.

  2. Make Base: Melt butter in a pan, stir in flour, and cook for 1 minute. Gradually whisk in milk until thick. Remove from heat, stir in the chopped chocolate until melted, then mix in the egg yolks and salt.

  3. Whip Whites: Beat egg whites until foamy, then gradually add sugar, beating until you achieve glossy, firm peaks.

  4. Fold: Gently fold one-third of the egg whites into the chocolate base to loosen it, then delicately fold in the remainder.

  5. Bake: Divide evenly among ramekins. Run your thumb around the interior rim of each dish (this helps the soufflé rise straight up). Bake at 190°C (375°F) for 13–15 minutes until puffed high.

Optional

  • Spice: Add a tiny pinch of cayenne pepper or espresso powder to the chocolate base to intensify the cocoa notes.

Cooking Tips

  • Upward Brush Strokes: When buttering your ramekins, always brush vertically upward. This creates tiny micro-tracks that encourage the rising soufflé dough to climb evenly up the sides.
