Description
Skoudehkaris is Djibouti's national dish — an aromatic one-pot rice and lamb stew that sits at the intersection of Somali, Afar, and Arabian culinary traditions. Long-grain rice is cooked directly in a spiced lamb broth fragrant with cardamom, cumin, cinnamon, and cloves, absorbing every layer of flavor as it steams. The lamb is tender, the rice a deep gold, and the whole pot carries the warmth of the Indian Ocean trade routes that shaped Djibouti's cuisine.
Presentation & How It's Eaten
Skoudehkaris is presented on a large communal platter, rice mounded high with pieces of tender lamb nestled throughout. It is garnished with fried onions and raisins. A bowl of spiced tomato sauce or a simple green salad is served alongside. It is eaten by hand or with a spoon, traditionally at midday as the main meal of the day.
Ingredients
600g bone-in lamb (shoulder or neck), cut into serving pieces
2 cups long-grain basmati rice, rinsed and soaked for 20 minutes
1 large white onion, finely diced, plus 1 extra onion thinly sliced for garnish
4 ripe tomatoes, roughly chopped
4 cloves garlic, minced
1 tsp fresh ginger, grated
4 cardamom pods, lightly crushed
1 cinnamon stick
4 whole cloves
1 tsp ground cumin
1/2 tsp ground turmeric
1/4 tsp cayenne pepper
3 tbsp vegetable oil
3 cups water or lamb stock
Salt, to taste
2 tbsp raisins, for garnish (optional)
Step-by-Step Directions
Brown the Lamb: Heat 2 tablespoons of oil in a large heavy pot over high heat. Season lamb pieces with salt. Brown on all sides in batches, about 3 minutes per side. Remove and set aside.
Build the Base: Reduce heat to medium. Add remaining oil and cook the diced onion for 7 minutes until golden. Add garlic, ginger, cardamom, cinnamon, cloves, cumin, turmeric, and cayenne. Stir for 1 minute.
Add Tomatoes and Lamb: Stir in tomatoes and cook for 5 minutes until they soften. Return the lamb to the pot.
Simmer the Meat: Pour in 3 cups of water or stock. Bring to a boil, then reduce heat, cover, and simmer for 30 minutes until the lamb is nearly tender.
Add the Rice: Drain the soaked rice and add it to the pot. Stir gently to distribute. Bring to a boil, then reduce heat to the lowest setting, cover tightly, and cook for 18 to 20 minutes.
Rest: Remove from heat. Leave covered for 5 minutes.
Garnish and Serve: Fry the sliced onion in oil until deep golden and crispy. Pile the skoudehkaris onto a platter, top with fried onions and raisins.
Optional
Goat Meat: Substitute the lamb with an equal weight of bone-in goat meat for a more traditional Djiboutian preparation. Extend the initial simmer by 15 minutes.
Cooking Tips
The Steam Seal: Once the rice goes in, resist the urge to lift the lid. The trapped steam is what cooks the rice evenly and keeps every grain separate. Trust the process.
