Description
French Riz Pilaf is a classic culinary technique where long-grain white rice is first toasted in hot butter with minced onions before being simmered in a measured amount of seasoned stock under a cartouche (parchment paper lid). This technique ensures that the rice grains cook evenly, absorb maximum flavor, and remain perfectly fluffy and separate without sticking together.
Presentation & How It's Eaten
Fluffed gently with a fork and served hot. It is often packed into small ramekins and unmolded onto the plate for an elegant, rounded presentation. It serves as the ultimate neutral, flavor-absorbing bed for stews, chicken fricassee, or pan-seared fish.
Ingredients
300g (1.5 cups) long-grain white rice (such as Basmati or Jasmine)
40g (3 tbsp) unsalted butter
1 medium yellow onion, very finely diced
450 ml (2 cups) low-sodium chicken or vegetable stock
1 bay leaf
2 sprigs of fresh thyme
Salt and white pepper to taste
Step-by-Step Directions
Rinse the Rice: Rinse the rice in a fine-mesh strainer under cold running water until the water runs completely clear. This removes excess surface starch and prevents the rice from turning sticky. Drain thoroughly.
Sauté the Onion: Melt the butter in a medium, heavy-bottomed saucepan or oven-safe pot over medium-low heat. Add the finely diced onion and cook for 4 to 5 minutes until soft and translucent, but do not let it color.
Toast the Rice (The Secret): Add the drained rice to the pot. Stir constantly for 2 to 3 minutes, coating the grains in the hot butter until they look slightly translucent and smell nutty. This seals the starch inside each grain so they stay separate.
Add Liquid and Aromatics: Pour in the stock, add the bay leaf, thyme sprigs, salt, and a pinch of white pepper. Stir once to combine and bring to a boil.
Cover with a Cartouche (The Secret): Cut a circle of parchment paper the same size as your pot with a small hole in the center (a cartouche). Place it directly onto the surface of the rice and liquid. Cover the pot with its lid, reduce the heat to low, and cook undisturbed for 15 minutes.
Steam and Rest: Remove the pot from the heat. Do not remove the lid or the paper. Let the pot sit undisturbed for 10 minutes. The trapped steam will finish cooking the rice perfectly.
Fluff and Serve: Discard the lid, parchment paper, bay leaf, and thyme. Gently fluff the rice with a fork, lifting the grains rather than stirring to keep them whole. Serve hot.
Optional
Baked Method: After adding the stock and paper cartouche, place the covered pot into a preheated oven at 180°C (350°F) for 15 minutes to bake. This provides even all-around heat.
Herbed Pilaf: Fold in a handful of finely chopped fresh parsley, chives, and chervil right after fluffing.
Cooking Tips
The Toasting Step: Do not skip coating and sautéing the dry rice in butter first. This step is what defines a pilaf and guarantees that your grains will not clump together.
Use a Fork, Never a Spoon: When fluffing the cooked rice, always use a fork. A spoon will mash the delicate grains and make the pilaf mushy.
