Description
Ratatouille is the quintessential summer vegetable stew of Nice. Rather than boiling all the vegetables together into a mush, the authentic method requires sautéing each vegetable—eggplant, zucchini, bell peppers, and onions—individually in olive oil first. This seals in their unique textures and flavors before they are combined and slow-simmered together with sweet tomatoes, garlic, and herbs.
Presentation & How It's Eaten
It can be served hot, warm, or even cold the next day (which many argue is when it tastes best). It is served in a shallow bowl, drizzled with raw, high-quality extra virgin olive oil and garnished with fresh basil. It is eaten alongside grilled meats, fish, or simply scooped up with toasted sourdough bread.
Ingredients
1 large eggplant (aubergine), cut into 1-inch cubes
2 medium zucchini, cut into 1-inch rounds
2 bell peppers (1 red, 1 yellow), cored and cut into 1-inch pieces
1 large yellow onion, chopped
4 ripe plum tomatoes, peeled and chopped (or 400g canned whole peeled tomatoes, crushed)
4 cloves garlic, minced
6 tbsp extra virgin olive oil (divided)
1 bouquet garni (thyme, rosemary, bay leaf)
A handful of fresh basil leaves, torn
Salt and freshly cracked black pepper
Step-by-Step Directions
Prep and Sweat the Eggplant: Toss the eggplant cubes with 1 tablespoon of salt in a colander. Let drain for 20 minutes to draw out excess moisture and bitterness, then rinse and pat dry with paper towels.
Sauté Individually (The Secret): In a large, heavy Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Sauté the eggplant cubes for 8 minutes until golden and softened. Remove and set aside. Add another tablespoon of oil and sauté the zucchini for 5 minutes until lightly browned. Remove and set aside. Sauté the bell peppers in another tablespoon of oil for 6 minutes. Remove and set aside.
Cook the Base: Heat the remaining 2 tablespoons of olive oil in the pot. Sauté the chopped onion for 6 to 8 minutes until soft and sweet. Add the minced garlic and cook for 1 minute.
Simmer the Tomatoes: Stir in the chopped tomatoes and the bouquet garni. Season with a pinch of salt and pepper. Cover and simmer gently on medium-low heat for 10 minutes until the tomatoes break down into a rustic sauce.
Combine and Slow-Cook: Add the cooked eggplant, zucchini, and bell peppers back into the tomato pot. Stir gently to combine. Cover the pot with the lid slightly ajar, turn the heat to low, and simmer slowly for 35 to 40 minutes, stirring occasionally, until all the vegetables are meltingly tender but have preserved their shape.
Finish and Cool: Discard the bouquet garni. Stir in the fresh, torn basil leaves. Taste and adjust seasoning with salt, pepper, and a generous splash of fresh olive oil.
Optional
Confit Biyaldi: Slice the vegetables into paper-thin rounds and arrange them in a beautiful, overlapping spiral pattern over a tomato-red pepper paste, then bake slowly under parchment paper for an elegant, visual presentation.
Vinegar Splash: Add a splash of red wine vinegar or balsamic vinegar in the final minute of cooking to brighten the sweet, cooked sugars of the summer vegetables.
Prevent Sticking: Stir the bottom of the pot gently with a flat wooden spatula every 10 minutes during the slow-cook step to ensure the dense, sweet tomatoes do not caramelize and stick to the bottom of the pot.
Cooking Tips
The Sauté Separately Rule: Do not skip step 2. If you throw all the raw vegetables into the pot together, they will steam and boil in their own moisture, turning grey and mushy. Sautéing them individually caramelizes their natural sugars and preserves their structural integrity.
Use High-Quality Oil: Since olive oil is a primary flavor carrier in this dish, use a high-quality extra virgin olive oil. The final drizzle over the warm dish elevates the herbal aromas of the basil and thyme.
