Origin

  • Region: Apulia / Campania

Description

Vibrant stalks of broccoli rabe (rapini) featuring a distinct, pleasant bitterness. They are quickly blanched to preserve their bright green color, then tossed vigorously (saltati) in a skillet loaded with extra virgin olive oil, toasted garlic slices, and crushed red pepper flakes.

Presentation

Piled loosely on a small side platter. Garnish with a final touch of raw olive oil and perhaps a pinch of flaky sea salt. It is the absolute classic side paired alongside grilled pork sausage (salsiccia) or slow-roasted porchetta.

Ingredients

  • 2 large bunches of fresh broccoli rabe (rapini, approx. 700g total)

  • 60ml high-quality extra virgin olive oil

  • 4 garlic cloves, sliced thin lengthwise

  • 1 tsp crushed red pepper flakes (peperoncino)

  • Fine sea salt, to taste

Step-by-Step Directions

  1. Trim the Greens: Cut off and discard the tough, woody bottom ends of the broccoli rabe stems (about 1 inch). Wash the remaining leaves, tender stems, and small broccoli-like florets thoroughly in cold water. Cut the long stalks in half crosswise for easier handling.

  2. Blanch: Bring a large pot of water to a rolling boil and add two tablespoons of sea salt. Drop the broccoli rabe into the water. Blanch for exactly 3 minutes. This softens the stems and leaches out the harsh, overwhelming bitterness while locking in a bright green color.

  3. Shock and Drain: Use tongs to lift the greens out of the boiling water and plunge them immediately into a bowl filled with ice water to stop the cooking process. Once chilled, drain them and press out any excess water using a clean kitchen towel.

  4. Toast the Aromatics: Heat the extra virgin olive oil in a large skillet over medium-low heat. Add the sliced garlic and crushed red pepper flakes. Cook gently for about 2 minutes, watching closely until the garlic edges turn a light golden straw color. Do not let it burn or turn dark brown.

  5. Sauté: Turn the heat up to medium. Add the blanched, drained broccoli rabe to the skillet. Use tongs to toss the greens continuously, coating them thoroughly in the infused garlic oil.

  6. Finish: Sauté for 4–5 minutes until the greens are tender all the way through and have absorbed the spicy oil. Season with fine sea salt to taste and serve warm.

Optional Variations

  • Rapini e Salsiccia: Sauté crumbled sweet Italian sausage in the oil before adding the garlic and greens to transform this side into a classic hearty companion.

Cooking Tips

  • Ensure the greens are well-drained after blanching. Water hitting the hot olive oil will cause splattering and steam the greens rather than letting them fry slightly in the flavorful oil.
