Description

Rabanada is Brazil's cherished holiday fried toast, traditionally served during Christmas Eve celebrations. Stale bread slices are soaked in sweetened milk or condensed milk, dipped in beaten eggs, fried until golden, and coated in cinnamon sugar.

Presentation

Stack the warm slices high on a platter and serve alongside fresh berries, port wine syrup, or a drizzle of warm caramel.

Ingredients

  • 1 loaf stale baguette or French bread, cut into 1-inch thick slices

  • 2 cups whole milk

  • 1/2 can (7 oz) sweetened condensed milk

  • 1 tsp vanilla extract

  • 3 large eggs

  • Neutral oil for deep frying

  • 1 cup granulated sugar

  • 2 tbsp ground cinnamon

Directions

  • Whisk together the whole milk, sweetened condensed milk, and vanilla extract in a shallow bowl.

  • In a second shallow bowl, beat the eggs thoroughly until cohesive.

  • Combine the granulated sugar and ground cinnamon in a wide dish for coating.

  • Heat 1 inch of neutral oil in a large skillet over medium-high heat to 350°F (175°C).

  • Dip each bread slice into the milk mixture for a few seconds per side (allow it to absorb liquid without becoming soggy).

  • Dip the soaked bread into the beaten eggs, letting excess drip off.

  • Fry 3 to 4 slices at a time in hot oil for 2 to 3 minutes per side until deep golden brown.

  • Remove with a slotted spoon, drain briefly on paper towels, then immediately roll in cinnamon sugar while hot.

Optional Variations

  • Rabanada ao Vinho: Substitute half of the milk with sweet red wine or Port wine for an authentic regional variation.

  • Baked Rabanada: Arrange soaked bread on a greased baking sheet and bake at 400°F (200°C) for 15 minutes, turning halfway, then roll in cinnamon sugar.

Cooking Tips

  • Use sturdy, day-old bread with a dense crumb so it holds its structure when soaked in milk.

  • Ensure oil stays at a consistent temperature; oil that is too cool results in greasy bread.
