Description: A smooth, velvety Brazilian baked caramel custard made with condensed milk, whole milk, and eggs, topped with a golden caramel glaze.
Presentation & How It's Eaten: Unmolded onto a rimmed platter with caramel sauce swimming around base. Served chilled, sliced into wedges with a dessert spoon.
Ingredients:
Caramel:
1 cup granulated sugar
1/3 cup water
Custard:
1 can (14 oz) sweetened condensed milk
1.5 cups whole milk
3 large eggs
1 tsp vanilla extract
Step-by-Step Directions:
Make Caramel: Heat sugar and water in a saucepan over medium heat without stirring until sugar melts and turns dark golden amber (5–7 minutes). Immediately pour into a 9-inch ring pan, coating bottom and sides; set aside.
Blend Custard: In a blender, combine condensed milk, whole milk, eggs, and vanilla extract. Blend on low speed for 1 minute until uniform.
Fill Pan: Pour custard mixture through a fine strainer into caramel-coated ring pan.
Bake in Water Bath: Cover pan tightly with aluminum foil. Place in a larger roasting pan filled with 1 inch of hot water. Bake at 350°F (175°C) for 1 hour until set.
Chill & Unmold: Cool completely at room temperature, then refrigerate for 4 hours. Invert onto a rimmed serving dish to release caramel sauce.
Optional: Blend at low speed to avoid forming tiny air bubbles inside the flan body.
Cooking Tips: Straining batter removes egg chalazae, ensuring an ultra-smooth texture without air pockets.
