Description

  • A staple of Sunday family lunches across Brazil, this silky baked custard features a golden caramel topping.

  • Requires only three core ingredients: sweetened condensed milk, whole milk, and eggs.

Presentation

  • Unmolded onto a deep rimmed serving platter to hold the liquid caramel sauce.

  • Garnished optionally with fresh mint leaves or sliced berries.

Ingredients

  • Caramel Coating: 1 cup granulated sugar, 1/3 cup warm water

  • Custard Base: 1 can (14 oz) sweetened condensed milk

  • Custard Base: 1.5 cups whole milk (use condensed milk can as measurement)

  • Custard Base: 3 large eggs

  • Custard Base: 1 tsp vanilla extract (optional)

Directions

  • Heat granulated sugar in a ring mold pan (or saucepan) over medium heat until melted and amber-colored.

  • Carefully add warm water, stir until smooth, and coat the bottom and sides of the ring mold with caramel.

  • Blend sweetened condensed milk, whole milk, eggs, and vanilla extract in a blender on low speed for 1 minute until smooth.

  • Strain the egg mixture through a fine-mesh sieve directly into the caramel-lined mold to eliminate air bubbles.

  • Cover tightly with aluminum foil and place inside a larger baking pan filled with hot water halfway up the sides (banho-maria).

  • Bake at 350°F (175°C) for 60 to 70 minutes until set around the edges with a slight jiggle in the center.

  • Cool completely, chill for at least 6 hours, then run a thin knife around the edges and invert onto a rimmed plate.

Optional Variations

  • Pudim de Café: Add 1 tablespoon of instant espresso powder to the blender mixture.

  • Pudim de Coco: Substitute 1/2 cup of whole milk with unsweetened coconut milk.

Cooking Tips

  • Straining the liquid through a fine sieve removes foam and egg chalazae, producing a velvety texture without holes.

  • Ensure water in the bain-marie remains hot but not violently boiling throughout the baking process.
