Origin

  • Region: Lazio (Ariccia)

  • Historical Context: Recognized as a Prodotto Agroalimentare Tradizionale, this ancient dish was historically prepared for town festivals and dates back to the Roman Empire.

Description

A stunning, celebratory roast consisting of a whole boneless pork belly rolled tightly around a lean pork loin. The interior is heavily seasoned with a fragrant paste of wild fennel, rosemary, garlic, and black pepper, while the exterior crackles into a shatteringly crisp, golden skin.

Presentation

Slicing through a porchetta should produce an audible crunch. Serve it warm or at room temperature, cut into thick discs that showcase the concentric circles of juicy loin, seasoned herbs, and rich belly fat, capped with a strip of dark, crispy crackling.

Ingredients

  • 1 whole pork belly (approx. 3.5kg, skin-on, boneless)

  • 1 center-cut pork loin (approx. 1.2kg, trimmed to fit perfectly inside the belly)

  • 45g wild fennel seeds, toasted and coarsely crushed

  • 4 sprigs fresh rosemary, leaves finely chopped

  • 6 sprigs fresh sage, leaves finely chopped

  • 8 garlic cloves, minced

  • 20g coarse sea salt

  • 15g coarsely cracked black pepper

  • 15ml extra virgin olive oil

Step-by-Step Directions

  1. Prep the Skin: Lay the pork belly skin-side up on a large cutting board. Using a sharp clean awl or paring knife, pierce the skin hundreds of times all over. This allows the fat to render out, ensuring an ultra-crispy crackling.

  2. Butterfly and Season: Flip the belly skin-side down. Score the flesh in a diagonal diamond pattern about 1/2-inch deep. Rub the olive oil over the flesh, then massage the salt, cracked pepper, minced garlic, chopped rosemary, sage, and crushed fennel seeds evenly across the meat.

  3. Roll and Bind: Place the pork loin down the center of the seasoned belly. Roll the belly tightly around the loin so that the edges of the belly meet and the skin completely wraps around the outside.

  4. Tie Securely: Using heavy butcher’s twine, tie the roll firmly at 1-inch intervals to form a uniform log. Wipe any escaping moisture or oil completely off the skin.

  5. Air-Dry: Place the rolled porchetta on a wire rack set over a baking sheet. Put it in the refrigerator completely uncovered for 24 hours. This air-drying process dehydrates the skin, which is crucial for achieving a glass-like crackling texture.

  6. Roast: Preheat your oven to 160°C (320°F). Roast the porchetta for 3 hours until the internal temperature of the loin reads 62°C (145°F). Crank the oven heat to its maximum setting, 230°C (450°F), and roast for another 20–30 minutes, watching closely until the skin completely puffs up and blisters into dark golden crackling. Rest for 30 minutes before carving.

Optional Variations

  • Umbrian Style: Add minced pork liver to the herb stuffing paste for a richer flavor profile.

Cooking Tips

  • Do not let any moisture or oil touch the skin during the roasting process, as it will steam the skin rather than fry it, resulting in a rubbery texture.
