Description

Pommes Duchesse (Duchess Potatoes) is an elegant, classic French preparation where smooth puréed potatoes are enriched with egg yolks, butter, and a pinch of nutmeg, piped through a pastry bag into decorative, ridged swirls, and baked until the edges are golden brown and crisp while the interior remains pillowy and soft.

Presentation & How It's Eaten

The baked swirls are served hot as an elegant side dish. They look beautiful arranged around a central roast or served alongside delicate fish dishes, steaks, or holiday roasts.

Ingredients

  • 1 kg (2.2 lbs) Yukon Gold or Russet potatoes, peeled and cubed

  • 60g (4 tbsp) unsalted butter, softened

  • 3 large egg yolks

  • 1/4 tsp ground nutmeg

  • Salt and white pepper to taste

  • 2 tbsp melted butter (for brushing)

Step-by-Step Directions

  1. Boil the Potatoes: Place the peeled, cubed potatoes in a large pot of cold, salted water. Bring to a boil and cook for 15 minutes, or until completely tender.

  2. Drain and Steam-Dry (The Secret): Drain the potatoes and return them to the warm pot over low heat for 2 to 3 minutes, stirring gently. This removes any surface moisture, ensuring your piped swirls hold their shape beautifully.

  3. Mash with a Ricer: Pass the hot potatoes through a potato ricer or food mill into a medium bowl.

  4. Mix in Butter and Egg Yolks: Stir in the softened butter, egg yolks, nutmeg, salt, and white pepper. Beat vigorously with a wooden spoon until the mixture is smooth and completely incorporated. Let it cool slightly so it is easy to handle.

  5. Pipe the Swirls: Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper. Transfer the potato mixture into a pastry bag fitted with a large star tip. Pipe the potatoes into uniform, 2.5-inch wide swirls, twisting upward to a neat point.

  6. Brush with Melted Butter: Gently brush the exterior of each swirl with a tiny bit of melted butter using a pastry brush (or spray with a light mist of cooking spray).

  7. Bake until Golden: Bake for 15 to 20 minutes, or until the ridged edges of the potato swirls are beautifully golden brown. Serve hot.

Optional

  • Parmesan Crust: Sprinkle a tiny dusting of finely grated Parmesan cheese over the piped swirls before baking for added savoriness.

  • Herb Infusion: Whisk in 1 tablespoon of very finely minced fresh chives into the potato mixture before piping.

Cooking Tips

  • Steam-Dry the Potatoes: If the potato mash is too wet, the piped ridges will melt and collapse in the oven. Steam-drying is the secret to a sharp, beautiful shape.

  • Let Them Cool Slightly: Let the riced potatoes cool down for a few minutes before stirring in the egg yolks so you don't accidentally scramble the eggs in the mash.
