Description

A classic Icelandic fish hash made of flaked white fish and boiled potatoes folded into a thick, seasoned white sauce.

Presentation & How It's Eaten

Served hot directly from pan or baked with melted cheese, served with dark Icelandic sweet rye bread (rúgbrauð) and butter.

Ingredients

  • 1.2 lbs boiled white fish fillets (cod or haddock), flaked

  • 1 lb boiled potatoes, peeled and roughly chopped

  • 1 large yellow onion, finely diced

  • 3 tbsp unsalted butter

  • 3 tbsp all-purpose flour

  • 1.5 cups milk

  • 1/2 tsp curry powder (traditional Icelandic addition)

  • Salt and white pepper, to taste

Step-by-Step Directions

  1. Sauté Onion: Melt butter in a large skillet over medium heat. Add diced onion and cook for 5 minutes until soft but not browned.

  2. Make Sauce: Whisk in flour and cook 1 minute. Gradually whisk in milk until a thick white béchamel sauce forms.

  3. Season: Stir in curry powder, salt, and white pepper.

  4. Combine: Fold flaked cooked cod and chopped boiled potatoes into sauce. Gently warm over low heat for 5–10 minutes, stirring carefully so fish stays in chunks.

  5. Serve: Scoop onto plates and serve warm with buttered dark rye bread.

Optional

  • Cheese Gratin: Transfer to a baking dish, top with shredded Hollander or cheddar cheese, and broil until bubbly.

Cooking Tips

  • Leftover Magic: Plokkfiskur is traditionally best made using leftover boiled fish and potatoes from the previous night's dinner.
