Description

A soft, fine-crumbed sandwich bread baked in a closed pullman pan, which prevents a thick crust from forming. The name literally translates to "bread of crumb."

Presentation & How It's Eaten

The go-to bread for tea sandwiches, croque-monsieur, or perfectly uniform morning toast.

Ingredients

  • 500g bread flour

  • 250ml milk

  • 50g butter

  • 30g sugar

  • 10g salt

  • 7g yeast

Step-by-Step Directions

  1. Mix: Combine all ingredients and knead until a very smooth, soft dough forms.

  2. Rise: Let rise for 2 hours.

  3. Shape: Press into a pullman loaf pan and close the lid. Let rise for 60 minutes.

  4. Bake: Bake at 190°C (375°F) for 30 minutes.

Optional

  • Honey: Substitute sugar with honey for a more nuanced sweetness.

Cooking Tips

  • Pullman Pan: If you don't have a pullman pan, any loaf pan will work, though the crust will be slightly thicker.
