Description

  • Savory chicken-and-onion fried rice seasoned with ketchup, wrapped in a thin, golden, runny-centered egg omelet.

Ingredients

  • 1 cup cooked Japanese short-grain rice

  • 1/4 cup diced chicken thigh

  • 1/4 yellow onion, finely diced

  • 2 tbsp ketchup

  • 2 large eggs

  • 1 tbsp milk

  • 1 tbsp butter

Step-by-Step Directions

  • Fried Rice: Sauté chicken and onion in a pan. Add rice and ketchup; stir-fry until well combined. Remove and shape into an oval on a plate.

  • Omelet: Whisk eggs and milk. Melt butter in a non-stick pan, pour in eggs, and cook until just set but still creamy.

  • Assemble: Carefully drape the omelet over the rice mound. Drizzle with extra ketchup if desired.
