Description
A customizable savory cabbage pancake bound with egg batter, pan-fried, and smothered in rich okonomiyaki sauce and Japanese mayonnaise.
Presentation & How It's Eaten
Served hot off the griddle on a flat plate, cut into wedges using a spatula, and eaten with chopsticks.
Ingredients
1 cup all-purpose flour
3/4 cup dashi stock
2 large eggs
3 cups cabbage, finely shredded
4 strips pork belly (or bacon)
2 tbsp okonomiyaki sauce
2 tbsp Japanese mayonnaise (Kewpie)
Katsuobushi (bonito flakes) & aonori (seaweed powder), for garnish
Step-by-Step Directions
Mix Batter: Whisk flour and dashi in a large bowl. Add eggs and shredded cabbage, stirring until well combined.
Form Pancake: Heat oiled skillet over medium heat. Pour batter to form a thick round disk. Lay pork belly strips across top.
Cook & Flip: Cook for 5 minutes, flip carefully so pork side is down, cover with lid, and cook for another 5–6 minutes.
Garnish: Flip back over, brush top with okonomiyaki sauce, drizzle with mayonnaise, and finish with aonori and dancing bonito flakes.
Optional
Seafood Swap: Replace pork belly with peeled shrimp or squid pieces folded into batter.
Cooking Tips
Do not press down on pancake with spatula while cooking, or it will lose its light, fluffy interior texture.
