Description
Nsima is life in Malawi. The thick, smooth maize porridge is more than a staple — it is the measure of a meal. If nsima is not on the table, no one has eaten. Made from finely ground white maize meal (ufa woyera), cooked with water into a stiff, smooth mass that is scooped and shaped by hand, nsima takes on the flavors of whatever it is served with. In Malawi it is always paired with ndiwo — a relish of cooked beans, dried fish, greens, or meat that provides the flavor, nutrition, and contrast. The two together are Malawian cuisine in its truest form.
Presentation & How It's Eaten
Nsima is served in smooth white mounds on individual plates or a shared board. The ndiwo — today, a simple and beloved combination of kidney beans and leafy greens — is served in a bowl alongside. Diners pinch off a small ball of nsima, press a dimple in it with the thumb, and use it to scoop a portion of ndiwo. Eating nsima well is an art that every Malawian child learns young.
Ingredients
2 cups white maize meal (ufa woyera / mealie meal)
4 cups water
1/2 tsp salt
1 can (400g) kidney beans, drained and rinsed
200g collard greens or kale, washed and thinly sliced
1 medium tomato, diced
1/2 white onion, finely diced
1 tbsp vegetable oil
Salt and pepper, to taste
Step-by-Step Directions
Boil the Water: Bring 4 cups of water to a rolling boil in a heavy-bottomed pot. Add salt.
Add Maize Meal: Pour in the maize meal in a slow, steady stream, stirring vigorously with a wooden spoon. Stir constantly to prevent lumps.
Cook and Thicken: Reduce heat to medium. Continue stirring as the nsima thickens. After 5 minutes, add the remaining dry maize meal a little at a time, folding it in firmly. The nsima should pull cleanly away from the sides of the pot and form a thick, smooth mass.
Shape and Rest: Smooth the top with a damp spoon. Cover and rest over the lowest heat for 5 minutes. Wet a plate and invert the nsima onto it.
Make the Ndiwo: Heat oil in a pan. Cook onion for 4 minutes until soft. Add tomato and cook 3 minutes. Add the kidney beans and stir to combine. Add the sliced greens on top, cover, and cook for 5 minutes until the greens are wilted. Season with salt and pepper. Stir to combine.
Serve: Plate nsima alongside the bean and greens ndiwo.
Optional
Chambo Fish Ndiwo: Replace the bean ndiwo with a simple stew of chambo (Lake Malawi tilapia) or any white fish, simmered in tomato and onion, for a truly traditional Malawian meal.
Cooking Tips
The Stir is the Work: Nsima demands your full attention for 15 minutes of continuous stirring. The reward is a perfectly smooth, lump-free porridge. Do not walk away from the pot, do not reduce your stirring tempo, and do not stop until the nsima pulls cleanly from the sides of the pot.
