Description
Muamba de Galinha is Angola's most celebrated dish: chicken slow-braised in rich red palm oil with okra, garlic, and whole chili peppers until the sauce turns deeply fragrant and the meat falls from the bone. The palm oil gives the stew its characteristic rust-orange color and a nutty, earthy depth that no other fat can replicate. It is the kind of dish that defines a cuisine — bold, warming, and unmistakably Central African.
Presentation & How It's Eaten
Muamba de Galinha is served in a deep bowl or on a wide plate, spooned generously over a mound of white rice or alongside funje (cassava porridge). The braising liquid is meant to soak into whatever starch is beneath it. It is a family dish, cooked in large quantities for Sunday meals and celebrations, and the pot is placed at the center of the table for everyone to serve themselves.
Ingredients
1 whole chicken (about 1.5 kg), cut into 8 pieces
4 tbsp red palm oil (dendê oil)
1 medium onion, finely chopped
4 cloves garlic, minced
2 whole fresh chili peppers (or 1 tsp crushed dried chili)
200g fresh okra, trimmed and halved
2 medium tomatoes, roughly chopped
1 tsp salt, or to taste
1/2 tsp black pepper
250ml water
Step-by-Step Directions
Season the Chicken: Pat the chicken pieces dry. Season generously with salt and black pepper on all sides and set aside.
Build the Base: In a large, heavy pot, warm the red palm oil over medium heat. Add the chopped onion and cook, stirring, for 5 minutes until softened. Add the garlic and chili peppers and cook for another 2 minutes until fragrant.
Brown the Chicken: Add the seasoned chicken pieces to the pot. Turn them to coat in the palm oil base and cook for 6–8 minutes, turning occasionally, until lightly colored on all sides.
Add Tomatoes and Water: Add the chopped tomatoes and 250ml water. Stir to combine, scraping any bits from the bottom of the pot. Bring to a steady simmer.
Braise: Cover the pot and cook over medium-low heat for 30 minutes, turning the chicken halfway through. The sauce will thicken and turn deeply orange-red.
Add Okra: Add the halved okra to the pot. Stir gently and continue to cook, uncovered, for a further 10–12 minutes until the okra is tender and the sauce has thickened further.
Taste and Serve: Taste the sauce and adjust seasoning. Serve hot over white rice or funje.
Optional
Smoked Fish Addition: Add a small piece of smoked fish (such as smoked catfish) to the pot alongside the tomatoes for a deeper, more complex umami flavor common in northern Angolan variations.
Cooking Tips
Red palm oil is non-negotiable for authentic flavor — the dish cannot be made with vegetable oil or olive oil and taste the same. Look for it in African or Caribbean grocery stores. Do not overheat palm oil or it will turn bitter; warm it gently before adding the onions. If fresh okra is unavailable, frozen okra works but should be added in the last 5 minutes only to prevent it from becoming too soft.
