Description

Moambe Chicken is the national dish of the Democratic Republic of the Congo and one of the most important dishes across Central and West Africa: chicken simmered in palm nut sauce (moambe) with garlic, chili, and spices until the thick, rust-orange sauce coats every surface and the chicken is fall-apart tender. Moambe sauce — made from the pulp of the oil palm fruit — is richer, more viscous, and more complex than red palm oil alone. It gives the dish its characteristic color, a faintly nutty sweetness, and a depth that can only come from this ingredient. The dish travels across borders — a version of it is Belgium's unofficial national dish too, a legacy of the colonial relationship that brought it westward.

Presentation & How It's Eaten

Moambe Chicken is served over white rice or alongside fufu. The thick, bright sauce is as much the dish as the chicken itself — diners drag each piece of chicken through the sauce before eating. It is a Sunday dish and a celebration dish, made in large quantities for families.

Ingredients

  • 1 whole chicken (about 1.5 kg), cut into 8 pieces

  • 1 can (400g) palm nut pulp / moambe sauce (also sold as 'sauce graine')

  • 1 medium onion, finely diced

  • 4 cloves garlic, minced

  • 1 tsp fresh ginger, grated

  • 1–2 fresh chili peppers, sliced

  • 2 tbsp vegetable oil

  • Salt and black pepper to taste

  • 300ml water or chicken broth

Step-by-Step Directions

  1. Season the Chicken: Rub the chicken pieces with salt, black pepper, half the garlic, and the grated ginger. Set aside for 15 minutes.

  2. Sear the Chicken: In a large heavy pot, heat the oil over medium-high heat. Brown the chicken pieces in batches, about 3–4 minutes per side. Remove and set aside.

  3. Build the Aromatics: In the same pot, add the diced onion and cook for 5 minutes until softened. Add the remaining garlic and sliced chili and cook for 2 more minutes.

  4. Add the Palm Nut Sauce: Add the canned palm nut pulp to the pot and stir to combine with the aromatics. If the paste is very thick, add 100ml of water and stir to loosen it into a sauce.

  5. Return the Chicken: Place the browned chicken pieces back into the pot. Pour in 200ml of water or chicken broth. Stir to coat the chicken in the sauce.

  6. Braise: Bring to a simmer, then reduce heat to medium-low. Cover and cook for 45–50 minutes, turning the chicken pieces every 15 minutes, until the chicken is fully cooked, tender, and the sauce has thickened and deepened in color.

  7. Taste and Serve: Taste and adjust seasoning with salt. Serve hot over white rice or with fufu.

Optional

Fresh Palm Nuts: If you can source fresh palm nuts (available in some African markets), crack them, boil for 30 minutes, pound the flesh, and pass through a sieve with water to extract the pulp for an even more authentic version.

Cooking Tips

Canned palm nut pulp (sold as 'sauce graine', 'crème de palme', or 'moambe') is widely available in African and Caribbean grocery stores. Do not substitute red palm oil — the palm nut pulp has a fundamentally different flavor and consistency. The sauce will look very thick at the start; it will thin slightly as the chicken releases its juices. If the sauce reduces too much, add water a little at a time.
