Description
A comforting, creamy Nordic soup made with fresh salmon, tender potatoes, leeks, and a rich fish broth finished with heavy cream and plenty of fresh dill.
Presentation & How It's Eaten
Served hot in soup bowls accompanied by dark Finnish rye bread and butter.
Ingredients
1.2 lbs fresh salmon fillet, skin removed, cut into bite-sized cubes
4 medium Yukon Gold potatoes, peeled and cubed
1 large leek, white and light green parts sliced
4 cups good quality fish stock
1 cup heavy cream
2 tbsp unsalted butter
1/2 cup fresh dill, finely chopped
1 bay leaf
Salt and white pepper, to taste
Step-by-Step Directions
Sauté Leeks: Melt butter in a Dutch oven over medium heat. Add sliced leeks and sauté for 5 minutes until soft.
Simmer Broth: Pour in fish stock, add cubed potatoes and bay leaf. Bring to boil, reduce heat, and simmer 10–12 minutes until potatoes are tender.
Add Salmon: Turn heat to low, add salmon cubes and heavy cream. Gently simmer for 3–5 minutes until salmon is cooked through.
Finish: Discard bay leaf. Season with salt and white pepper, then stir in fresh dill.
Serve: Ladle hot soup into bowls and garnish with extra dill.
Optional
Allspice: Add 4 whole allspice berries to the broth for traditional warming Nordic spice depth.
Cooking Tips
Gently Simmer Salmon: Do not boil once salmon and cream are added; boiling toughens the fish and curdles cream.
