Description

Langouste à la Vanille is the signature dish of the Comoros — a small volcanic archipelago in the Indian Ocean that is one of the world's leading producers of vanilla. Freshly caught spiny lobster (langouste) is halved and grilled, then finished in a delicate butter and cream sauce perfumed with real vanilla beans, white wine, and shallots. The result is a dish of extraordinary elegance: the brininess of the sea meeting the floral, caramel depth of Comorian vanilla in one of the most distinctive flavor pairings in African cooking.

Presentation & How It's Eaten

Langouste à la Vanille is plated with the lobster half in its shell, the vanilla cream sauce poured over and around it. It is served with steamed white rice or coconut rice and a simple green salad. This is a dish for celebration and for honoring guests — it is the taste of the islands at their most generous.

Ingredients

  • 2 fresh spiny lobsters (langouste), 500 to 700g each, halved lengthwise

  • 2 vanilla beans (Comorian or Madagascar), split and seeds scraped

  • 3 tbsp unsalted butter

  • 2 shallots, finely minced

  • 1/2 cup dry white wine

  • 1/2 cup heavy cream

  • 1 tbsp fresh lemon juice

  • Salt and white pepper, to taste

  • Fresh chives or parsley, chopped, to garnish

  • 1 tbsp neutral oil, for grilling

Step-by-Step Directions

  1. Prepare the Lobster: Halve the lobsters lengthwise with a sharp heavy knife. Remove the stomach sac and intestinal tract. Brush the cut surface with oil and season with salt and white pepper.

  2. Grill the Lobster: Heat a grill or griddle pan to high. Place the lobster halves cut-side down and cook for 4 to 5 minutes until the flesh is opaque and lightly charred. Flip and cook for a further 2 minutes on the shell side. Set aside, keeping warm.

  3. Make the Vanilla Butter Sauce: In a small saucepan over medium heat, melt 1 tablespoon of butter. Add the minced shallots and cook gently for 3 minutes until softened.

  4. Deglaze: Pour in the white wine and add the scraped vanilla seeds and pods. Bring to a simmer and reduce by half, about 4 minutes.

  5. Finish the Sauce: Add the heavy cream and simmer for 3 minutes until slightly thickened. Remove the vanilla pods. Remove from heat and whisk in the remaining 2 tablespoons of cold butter, one tablespoon at a time, to emulsify the sauce. Add lemon juice and season with salt and white pepper.

  6. Plate and Serve: Place the grilled lobster halves on warm plates. Spoon the vanilla cream sauce generously over the flesh. Garnish with chopped chives or parsley.

Optional

Coconut Rice Base: Serve on a bed of rice cooked in coconut milk with a pinch of salt and sugar for a full Comorian flavor experience.

Cooking Tips

Use Real Vanilla Beans: This dish exists because of the exceptional quality of Comorian vanilla — warm, creamy, and floral. Vanilla extract will not replicate this. Split and scrape fresh vanilla pods and add both the seeds and the pod to the sauce for the full depth of flavor.
