Description

Small egg noodles pressed into boiling water, tossed hot with pungent aged Alpine cheeses, and topped with golden fried crispy onions.

Presentation & How It's Eaten

Served hot in a skillet or baking dish, traditional accompanied by sweet applesauce on the side.

Ingredients

  • 2.5 cups all-purpose flour

  • 3 large eggs

  • 3/4 cup milk or water

  • 1/2 tsp salt

  • 1.5 cups strong Alpine cheese (combination of Appenzeller, Gruyère, and Sour Milk Cheese), grated

  • 2 large yellow onions, thin sliced

  • 3 tbsp butter

  • Salt and black pepper

Step-by-Step Directions

  1. Make Dough: Beat flour, eggs, milk, and salt together until a sticky batter with bubbles forms. Rest 10 minutes.

  2. Fry Onions: Melt butter in skillet, add sliced onions, cook over medium-low heat for 15 minutes until dark brown and crispy. Set aside.

  3. Press Noodles: Bring a large pot of salted water to boil. Press batter through a Spätzle maker or colander with wide holes into boiling water.

  4. Boil: Cook noodles for 2–3 minutes until they float to top; remove with slotted spoon.

  5. Layer & Toss: Layer hot noodles and grated cheese alternately in a warm bowl, tossing so heat melts cheese into gooey strands. Top with crispy fried onions.

Optional

  • Applesauce: Serve with cold applesauce on the side for classic Alpine sweet and savory contrast.

Cooking Tips

  • Use Stinky Cheese: Strong, aromatic cheeses like Appenzeller give Knöpfle its distinct traditional taste.
