Description
Kufta bel Batatis are crispy, comforting potato and beef patties. While traditional kufta across the Middle East relies primarily on minced meat and aromatics, this beloved Sudanese home-style variation incorporates mashed potatoes directly into the beef mixture. It is seasoned beautifully with fresh dill and coriander, resulting in a rich, flavorful patty that is incredibly soft on the inside with a perfectly crisp, golden breadcrumb crust.
Presentation & How It's Eaten
These savory patties are shaped into thick rounds, deep-fried until crunchy, and piled high on a serving dish. They are an absolute crowd-pleaser for large family gatherings, holidays, or celebrations. They are best enjoyed hot, either on their own as a finger food dipped in hot sauce, or stuffed into flatbread with fresh greens.
Ingredients
500g potatoes (2 or 3 medium), peeled and quartered
1 tbsp butter
500g finely minced beef
4 garlic cloves, pressed
20g fresh dill, finely chopped
20g fresh coriander, finely chopped
2 tbsp ground coriander
100g plain breadcrumbs (plus more for the coating)
3 to 4 large eggs, beaten (as needed)
1 tbsp vinegar (any preferred type)
1L neutral vegetable oil (for deep-frying)
Salt and pepper, to taste
Step-by-Step Directions
Boil and Mash the Potatoes: Place the quartered potatoes in a medium pot and cover them completely with water. Bring to a boil and cook for 15 to 20 minutes until completely tender (a knife should slide through easily). Drain the water, then mash the hot potatoes directly in the pot along with the 1 tablespoon of butter. Season to taste with salt and pepper.
Mix the Kufta Base: In a large mixing bowl, add the finely minced beef and season it with salt, pepper, and the pressed garlic. Add the warm mashed potatoes to the beef and mix thoroughly.
Bind the Mixture: Fold in the finely chopped dill, fresh coriander, ground coriander, and 100g of plain breadcrumbs. Mix with your hands until everything is evenly incorporated and the texture becomes firm and malleable. Let the mixture rest for 5 to 10 minutes. Note: If the mixture still feels too wet or loose after resting, knead in a few more breadcrumbs a little at a time.
Shape the Patties: Portion the mixture into smooth circular patties roughly 6 to 7cm in diameter and 2 to 3cm thick. Gently flatten the top and bottom faces, and smooth the edges so the patties are perfectly contained.
The First Breadcrumb Coating: Spread a layer of plain breadcrumbs into a shallow dish. Roll each shaped kufta in the breadcrumbs until completely covered, then transfer them to a plate.
Chill to Set: Place the coated patties into the refrigerator or freezer to rest for 20 minutes. This is a vital step to prevent them from breaking apart in the hot oil.
Set Up the Frying Station: Whisk 3 of the eggs in a bowl and season with a pinch of salt, pepper, and the 1 tablespoon of vinegar (this forms your wet batter). Keep your remaining breadcrumbs nearby in a separate dish. Heat 1 liter of neutral vegetable oil in a large frying pan over high heat. The oil is ready when a tiny scrap of the mixture sizzles immediately upon contact.
Double-Coat and Fry: Work in small batches. Dip a chilled kufta completely into the egg batter, roll it one more time in the breadcrumbs, and lower it immediately into the hot oil. Repeat with a few more patties, ensuring you do not crowd the pan.
Drain and Serve: Deep-fry for about 8 minutes total, flipping only once or twice, until the exterior is beautifully crisp and deep golden-brown. Use a slotted spoon to transfer them to kitchen paper towels or a wire sieve to drain excess oil. Serve hot.
Optional
Vegetarian Lentil Alternative: You can easily swap out the minced beef for 400g of cooked brown lentils. Mash the lentils gently, combine them with the rest of the ingredients, and follow the exact same shaping, chilling, and frying steps.
Herb Swap: Substitute the fresh coriander entirely with an equal amount of finely chopped fresh flat-leaf parsley if you prefer a cleaner, earthier herbal profile.
Cooking Tips
The Fine Mince Secret: For the absolute best structural hold and a melt-in-your-mouth texture, use a very fine grind of beef. If you bought standard store-bought mince, it is highly recommended to run it through a home food processor or mincer one extra time along with a small yellow onion before mixing.
The Temperature Balance: Make sure your oil stays hot enough to instantly crisp the breadcrumbs. If the oil temperature drops too low (usually from overcrowding the pan), the potatoes inside will soften too quickly, causing the patty to crack open and absorb excess grease.
