Country of Origin
Sudan (Specifically native to the Red Sea coastal region)
Description
Jambari Mahamar translates to "fried prawns." While seafood is not typically the first thing associated with mainland Sudanese cuisine, fresh prawns are a celebrated local delicacy along Sudan's Red Sea coast. This dish features jumbo prawns infused with a bright garlic, cumin, and citrus marinade, coated in crispy breadcrumbs, and deep-fried to a perfect golden crunch.
Presentation & How It's Eaten
The golden battered prawns are stacked on a plate and heavily doused with fresh lime juice. They are traditionally served warm as an appetizer or main coastal dish alongside fresh lemon or lime wedges and a side of creamy taheena (sesame seed paste) dip.
Ingredients
1kg jumbo prawns, peeled and deveined
400g plain flour (divided: 100g for cleaning, 300g for breading)
3 tbsp table salt (plus more as needed)
100ml vinegar (any type, divided)
1 tsp ground black pepper (plus more as needed)
1 tbsp ground coriander
1 tbsp ground cumin
2 tsp chili powder or flakes
6 garlic cloves, pressed
1 large lemon or 2 limes, juiced (plus extra wedges for serving)
4 large eggs, beaten
300g plain breadcrumbs
1L neutral vegetable oil (for deep-frying)
Sesame seed dip (taheena), for serving
Step-by-Step Directions
Clean the Seafood (Odor Removal): Rinse the prawns and place them in a large mixing bowl with 100g of plain flour. Toss well so the flour completely coats each prawn. Let it sit for 2 minutes, then thoroughly rinse the flour off under running water. Repeat this exact process in the bowl using 2 tablespoons of salt dissolved in 50ml of vinegar, then rinse a final time.
Marinate: In the cleaned bowl, create the marinade by combining the remaining 1 tablespoon of salt, black pepper, ground coriander, ground cumin, chili powder, pressed garlic, lemon or lime juice, and the remaining 50ml of vinegar. Add the prawns, mix thoroughly, and leave them to marinate at room temperature for 30 minutes to 2 hours.
Set Up the Breading Station: Arrange three separate bowls side-by-side next to your stove.
Bowl 1: The remaining 300g of plain flour seasoned with a pinch of salt.
Bowl 2: The 4 beaten eggs, seasoned with a pinch of salt and pepper.
Bowl 3: The plain breadcrumbs.
Heat the Oil: Pour 1 liter of neutral vegetable oil into a deep-frying pan and set it over medium heat. The oil is ready when a tiny pinch of flour dropped in sizzles immediately. Prepare a separate plate lined with kitchen paper towels nearby.
Batter the Prawns: Work in small batches. Dredge a few marinated prawns in the plain flour until lightly coated on all sides. Pick them up by the tail, dip them entirely into the beaten egg, and then roll them thoroughly in the breadcrumbs until completely covered.
Fry and Drain: Carefully lower the battered prawns into the hot oil. Deep-fry for 3 to 4 minutes, turning occasionally, until they turn an even golden-brown color on all sides. Use a slotted spoon to transfer them to the paper towels to drain. Repeat with the remaining prawns without overcrowding the pan. Serve warm.
Optional
Stewed Prawns (No-Oil Alternative): Finely chop 1 medium yellow onion, ½ seeded green pepper, and 1 to 3 green chilies (to taste). Combine them in a large pan with 1L of tomato juice or passata, 3 pressed garlic cloves, 1 tablespoon of vinegar, ½ tablespoon of ground coriander, and 1 teaspoon of ground cumin. Season with salt and pepper. Simmer for 15 minutes until the tomato reduces and deepens in color. Add the cleaned prawns and cook for an additional 8 to 10 minutes until cooked through.
Size Substitute: Medium shrimp can easily be used as a direct substitute if jumbo prawns are unavailable.
Boiled Version: To bypass frying entirely, boil the cleaned prawns in salted water for 4 to 5 minutes until bright red. Drain them in a sieve, toss them with the marinade, and leave them covered to absorb the flavors for 5 minutes before serving warm.
Cooking Tips
Don't Skip the Flour/Vinegar Rinse: The unique two-step wash with flour followed by a salt-vinegar solution is a traditional technique used to strip away any overpowering, muddy, or fishy odors from sea-caught seafood.
Batch Frying: Avoid dropping too many prawns into the oil at once. Crowding the pan drops the oil temperature sharply, which will make the breadcrumbs absorb excess oil and turn soggy instead of shatteringly crisp.
