Origin
Region: Sicily (Island of Pantelleria)
Historical Context: Hailing from the volcanic island of Pantelleria situated between Sicily and Tunisia, this salad showcases the island’s most famous export: tiny, intensely flavorful wild capers preserved in sea salt.
Description
A robust, Mediterranean potato salad. Waxy boiled potatoes are tossed while warm with ripe summer tomatoes, crisp red onions, salted capers, and wrinkled black olives, dressed in red wine vinegar and extra virgin olive oil.
Presentation
Served at room temperature on large platters. It is a hearty, texturally diverse side that pairs perfectly with grilled mackerel, swordfish, or roasted chicken.
Ingredients
600g waxy salad potatoes (like fingerlings or red bliss)
300g ripe cherry or datterini tomatoes, halved
1 small red onion, sliced into thin rings
3 tbsp salt-packed capers from Pantelleria (soaked in water for 15 minutes, then rinsed)
50g pitted black olives
45ml extra virgin olive oil
2 tbsp red wine vinegar
Fresh dried wild oregano and fresh basil leaves
Step-by-Step Directions
Boil Potatoes: Place the unpeeled potatoes into a pot of cold salted water. Bring to a boil and cook for 15–20 minutes until a fork easily pierces the center. Drain and let cool just enough to handle.
Mellow Onions: While the potatoes cook, place the sliced red onion rings into a small bowl of cold water with a splash of vinegar for 15 minutes. This takes away their raw sulfur sting, making them sweet and crisp.
Slice Warm: Peel the warm potatoes (their skins slide off easily using a paper towel) and cut them into bite-sized 1/2-inch thick rounds. Place them in a large mixing bowl.
Dress Warm: Pour the red wine vinegar over the warm potatoes immediately. This allows the starches to absorb the acidity deep into the core of the potato.
Assemble: Drain the red onions and add them to the bowl along with the halved tomatoes, rinsed capers, and black olives.
Emulsify: Drizzle with the extra virgin olive oil, scatter a generous pinch of dried oregano and torn basil leaves over the top, and toss everything together thoroughly. Let it sit for 20 minutes before serving so the flavors blend.
Optional Variations
Insalata Pantesca con Sgombro: Flake oil-packed canned mackerel or tuna directly into the salad to upgrade this side into a traditional hot-weather lunch dish.
Cooking Tips
Always use salt-packed capers rather than pickled brine capers if available. Salt-packed capers retain a firm texture and a pure floral, savory flavor that vinegar-brined alternatives cannot replicate.
