Servings: 6

Origin

  • Region: Campania (Naples)

  • Historical Context: A cornerstone of the Neapolitan Christmas Eve feast (Vigilia). The name rinforzo (reinforcement) comes from the traditional practice of refreshing and "reinforcing" the salad daily throughout the holidays by adding new ingredients to the leftover base.

Description

A unique, punchy pickled salad centered around blanched cauliflower florets tossed with crisp pickled vegetables (giardiniera), green and black olives, capers, and preserved salted anchovy fillets, dressed with sharp white vinegar.

Presentation

Served cold or at room temperature in a large ceramic bowl as a stark, digestive palate cleanser alongside the heavy fried fish dishes typical of Neapolitan holiday meals.

Ingredients

  • 1 large head of cauliflower, broken into bite-sized florets

  • 150g mixed pickled vegetables (Italian giardiniera, drained and chopped)

  • 50g large green olives, pitted

  • 50g black Gaeta olives, pitted

  • 2 tbsp capers, rinsed

  • 4-5 oil-packed anchovy fillets, chopped

  • 60ml extra virgin olive oil

  • 30ml white wine vinegar

  • Fine sea salt and freshly cracked black pepper

Step-by-Step Directions

  1. Blanch Cauliflower: Bring a large pot of salted water to a rolling boil. Drop in the cauliflower florets and cook for exactly 5–6 minutes. They should be cooked through but remain noticeably firm and crunchy (al dente); do not let them become soft or mushy.

  2. Shock: Drain the cauliflower immediately and plunge it into ice water to arrest the cooking process and preserve its clean white color. Drain thoroughly and dry.

  3. Combine Elements: In a large glass or ceramic mixing bowl, combine the cold cauliflower florets, the chopped pickled giardiniera, green olives, black olives, rinsed capers, and chopped anchovies.

  4. Emulsify Dressing: In a small glass, whisk together the white wine vinegar, extra virgin olive oil, a pinch of salt, and cracked black pepper.

  5. Coat: Pour the dressing over the salad and toss vigorously to ensure the cauliflower is completely coated in the oil and vinegar.

  6. The Over-Night Rest: Cover the bowl tightly and store it in the refrigerator for at least 24 hours before serving. This rest is non-negotiable; the cauliflower needs time to pickle slightly and absorb the savory umami of the anchovies.

Optional Variations

  • Rinforzo con Papaccelle: Authentically, this salad includes papaccelle—short, sweet, round pickled bell peppers native to Campania, chopped into thick strips.

Cooking Tips

  • Be conservative with initial salting. The combination of commercial giardiniera, two types of olives, capers, and anchovies introduces a massive natural salt profile to the dish.
