Origin

  • Region: Campania (Naples)

  • Historical Context: A historic Neapolitan dish. The word impeciata translates to "coated in black pepper," highlighting the heavy use of pepper which was historically used to preserve seafood.

Description

One of the simplest, purest expressions of seafood cooking: fresh mussels are steamed closed in a dry pot with their own natural sea liquor, flavored with plenty of crushed black pepper, garlic, and fresh parsley.

Presentation

Served family-style right in the middle of the table in a large communal bowl, glistening with its own briny, peppery juices. It is traditionally accompanied by grilled rustic bread slices to dip into the broth.

Ingredients

  • 2kg fresh mussels (ideally Mediterranean mussels, scrubbed and debearded)

  • 2 tablespoons coarsely cracked black pepper (freshly ground)

  • 1 bunch fresh flat-leaf parsley, finely chopped

  • 45ml extra virgin olive oil

  • 3 garlic cloves, gently smashed

  • 1 lemon, cut into wedges (optional)

Step-by-Step Directions

  1. Inspect the Mussels: Sort through the mussels under cold running water. Discard any shells that are cracked. If a shell is open, tap it against the counter; if it doesn't close immediately, discard it. Pull off any fibrous threads ("beards") hanging out from the shell seams.

  2. Sauté Aromatics: In a very large, deep pot with a tight-fitting lid, heat the extra virgin olive oil over medium-high heat. Add the smashed garlic cloves and a third of the chopped parsley. Sauté for 1 minute until fragrant but not browned.

  3. Add Mussels and Pepper: Drop all the cleaned mussels directly into the hot pot. Immediately sprinkle the two tablespoons of coarsely cracked black pepper evenly over the shells. Do not add water, wine, or salt.

  4. Cover and Steam: Fit the lid tightly onto the pot and crank the heat to high. Let the mussels steam inside their own juices for 4 to 5 minutes.

  5. Shake the Pot: Hold the lid down firmly with towels and shake the entire pot vigorously twice during cooking to redistribute the black pepper and garlic juices throughout the layers.

  6. Finish and Inspect: Uncover the pot. The mussels should all be wide open. Toss in the remaining chopped parsley and stir everything together once with a large spoon. Discard any mussels that failed to open. Pour the mussels and their briny black-pepper broth into a large warm serving bowl and serve immediately.

Optional Variations

  • Zuppa di Cozze: Add a few halved cherry tomatoes and a splash of white wine to the garlic oil base before adding the mussels for a light tomato broth variation.

Cooking Tips

  • Do not add salt to this dish; the interior liquor trapped inside fresh live mussels is naturally salty and provides the perfect balance on its own.
