Description
An extraordinary culinary transformation of the humble potato. Russet potatoes are sliced into uniformly thin, thread-like matchsticks, washed repeatedly to strip away all surface starch, and flash-fried in seconds with dried red chilies, fragrant Sichuan peppercorns, and a heavy splash of rice vinegar to yield a surprising, snappy, and tart crunch.
Presentation & How It's Eaten
Served immediately hot from the wok onto a plate. The potato strips look clean, translucent, and glossy, interspersed with bright red flecks of dried chili. It is eaten family-style with chopsticks.
Ingredients
2 large Russet potatoes (approx. 500g)
4-5 dried red Chinese chilies (snipped in half, seeds removed)
1 tsp whole Sichuan peppercorns
2 cloves garlic (sliced thin)
2 tbsp vegetable oil
1.5 tbsp white rice vinegar (or clear rice vinegar)
1/2 tsp fine salt
1/2 tsp sugar
1 scallion (cut into thin matchsticks, for garnish)
Step-by-Step Directions
Slice Thinly: Peel the potatoes. Slice them lengthwise into very thin planks, then stack those planks and cut them into precise, matchstick-sized threads (or use a mandoline slicer).
Wash the Starch: This is the most crucial step. Place the potato matchsticks into a large bowl of cold water. Swirl them around vigorously until the water turns completely cloudy with starch. Drain, refill the water, and repeat 3–4 times until the water remains pristine and crystal-clear. Leave them soaking in cold water until ready to cook, then drain and dry completely.
Infuse Oil: Heat the vegetable oil in a wok over medium heat. Add the whole Sichuan peppercorns. Fry slowly for 1 minute until fragrant. Carefully scoop out and discard the spent peppercorns, leaving behind a highly aromatic oil.
Bloom Aromatics: Turn the heat up to medium-high. Throw in the dried chili halves and sliced garlic, stir-frying for 15 seconds until the chilies darken slightly.
Flash Stir-Fry: Drop the dry potato matchsticks into the wok. Crank the heat to maximum high and stir-fry continuously for exactly 2 minutes.
Season and Crisp: Drizzle the white rice vinegar, salt, and sugar over the potatoes. Toss rapidly for 1 final minute. The potato strips should look translucent but still hold their stiff shape. Toss in the scallions, remove from heat, and serve immediately.
Cooking Tips
The Clarity Test: If your potato matchsticks are not rinsed until the water is completely clear, the starch will caramelize in the hot wok, turning the dish into a gummy, sticky mash. Rinsing yields that signature, prized, water-chestnut-like crispness.
