Description

A deeply restorative, curative broth rooted in traditional Chinese herbology. A whole chicken is gently steeped over hours with dried goji berries, sweet red dates (Jujube), and woody astragalus root, creating an exceptionally clean, naturally sweet, and therapeutic golden broth meant to restore vital energy (Qi).

Presentation & How It's Eaten

Served hot in deep ceramic bowls, showcasing the whole tender chicken pieces surrounded by soft, plump red dates and shriveled herbs. The soup is sipped clear for its medicinal properties, while the chicken meat is dipped in light soy sauce.

Ingredients

  • 1 small whole organic chicken (approx. 1.2kg / 2.6 lbs, or cut into large quarters)

  • 6 cups filtered water

  • 1 thumb ginger (sliced thick)

  • 1 tsp salt (added at the very end to taste)

The Traditional Herbal Toolkit:

  • 5 dried red dates (Jujube, pitted)

  • 2 tbsp dried goji berries (Wolfberries)

  • 3 pieces dried astragalus root slices (Huang Qi)

  • 4 pieces dried Chinese yam slices (Huai Shan)

  • 1 tbsp dried ginseng or angelica root (Dang Gui, optional for a deep bitter notes)

Step-by-Step Directions

  1. Blanch Chicken: Put the chicken pieces into a deep pot filled with cold water. Bring it to a boil over high heat for 3 minutes to extract all surface blood scum. Drain the chicken completely and wash it meticulously under cold running water.

  2. Rinse Herbs: Briefly rinse all your dried herbs (red dates, goji berries, astragalus, yam, ginseng) under cold water in a fine mesh strainer to clear away any processing dust.

  3. Assemble Pot: Place the clean blanched chicken back into a large clean stockpot or clay pot. Arrange the rinsed herbs and thick ginger slices all around the meat.

  4. Fill and Boil: Pour in the 6 cups of fresh filtered water. Bring the pot to a boil over high heat.

  5. Slow Medicinal Simmer: Once boiling, skim off any stray foam from the surface. Immediately turn the heat down to low, cover tightly with a lid, and let the soup simmer very gently for 1.5 hours. Do not let it boil vigorously; a lazy bubble preserves the medicinal properties and clear clarity.

  6. Season and Serve: Uncover the pot. The chicken should be incredibly tender and the broth a beautiful light amber-gold color. Stir in the salt to taste, let simmer for 1 minute, and ladle into bowls warm.

Cooking Tips

  • Hold the Salt Until the End: Never add salt to an herbal soup at the start of cooking. Salt draws out moisture too quickly from the chicken fibers and locks up the cells of the dried herbs, preventing them from fully releasing their natural sweetness, nutrients, and therapeutic oils into the water.
