Description

A masterclass in subtlety and pure chicken flavor. A whole chicken is gently poached with ginger and pandan leaves, then plunged into ice water to create a gelatinous skin. The accompanying rice is fried in rendered chicken fat and cooked directly in the flavorful poaching broth.

Presentation & How It's Eaten

The chicken is chopped into bone-in bite-sized pieces and served at room temperature over a mound of hot, incredibly fragrant rice. It is accompanied by a bowl of hot broth, sliced cucumbers, and three signature dipping sauces: a fiery chili sauce, a pungent ginger-garlic paste, and sweet dark soy.

Ingredients

  • 1 whole free-range chicken (approx. 1.5kg / 3.3 lbs)

  • 2 tbsp coarse sea salt (for scrubbing the skin)

  • 1 large bunch scallions

  • 80g fresh ginger (sliced)

  • 4 pandan leaves (tied into knots)

  • 2 cups jasmine rice

  • 2 tbsp chicken fat (rendered from the chicken's tail/excess skin, or vegetable oil)

  • 4 cloves garlic (minced)

  • 1 cucumber (sliced, for serving)

Step-by-Step Directions

  1. Prep Chicken: Scrub the skin of the chicken thoroughly with coarse sea salt to remove impurities and smooth the texture. Rinse well. Stuff the cavity with half of the ginger slices and half of the scallions.

  2. Poach: Place the chicken in a large stockpot. Cover completely with cold water. Add the remaining ginger, scallions, and pandan leaves. Bring to a boil, then instantly drop the heat to the lowest setting, cover tightly, and gently simmer for 40–45 minutes.

  3. Ice Bath: Carefully lift the chicken out of the broth. Plunge it immediately into a large bowl filled with ice water for 10 minutes. This stops the cooking and shrinks the skin, creating a delicious gelatinous layer. Remove, drain, and brush the skin with a little sesame oil.

  4. Make Rice: Wash the jasmine rice and drain thoroughly. In a pan, melt the chicken fat over medium heat. Fry the minced garlic and a little minced ginger for 1 minute, then add the dry rice and toast for 2 minutes. Transfer the rice to a rice cooker and fill with the reserved chicken poaching broth instead of water. Cook normally.

  5. Prepare Sauces: Blend fresh red chilies, garlic, ginger, lime juice, and a splash of the hot chicken broth to make the chili sauce. Mix grated ginger, minced garlic, salt, and hot oil for the ginger paste.

  6. Carve & Assemble: Carve the chicken into clean pieces. Serve alongside the seasoned rice, cucumber slices, a bowl of the remaining hot broth (seasoned with salt and white pepper), and the dipping sauces.

Cooking Tips

  • Quality Matters: Because the flavor profile of this dish is incredibly clean, using a high-quality, free-range or organic chicken makes a massive difference in the depth of the broth and the flavor of the rice.
