About Ghormeh Sabzi
Ghormeh Sabzi is Iran's most beloved stew, and arguably one of the most complex flavour profiles of any dish in the world. A foundation of three fresh herbs — fenugreek, parsley, and dried fenugreek leaves — is slow-fried until dark and caramelised, then braised for hours with lamb, kidney beans, and dried Persian limes (limu omani), which contribute an extraordinary sour, slightly bitter depth. The result is a braise so dark it is nearly black, with a flavour layered and resonant enough to silence a table. In Iran, ghormeh sabzi is the dish of celebration, homecoming, and homesickness.
Ingredients
700g lamb shoulder, cut into 4 cm chunks
1 large onion, finely diced
3 tbsp neutral oil or ghee
200g fresh flat-leaf parsley, finely chopped
150g fresh fenugreek leaves, finely chopped (substitute: 3 tbsp dried fenugreek/kasuri methi)
100g fresh chives or spring onion tops, finely chopped
4 dried Persian limes (limu omani), pierced several times with a knife
400g canned kidney beans, drained
1 tsp turmeric, ½ tsp cinnamon, ½ tsp black pepper
Salt to taste, 500ml water or light lamb stock
Directions
Sauté the Onion and Meat: Heat 2 tbsp oil in a heavy pot over medium-high heat. Fry diced onion until golden, about 8 minutes. Add lamb and sear on all sides until browned. Add turmeric, cinnamon, and black pepper. Stir to coat.
Fry the Herbs: In a separate wide pan, heat 1 tbsp oil over medium heat. Add all the fresh and dried herbs. Fry, stirring continuously, for 15–20 minutes until the herbs are very dark — almost black and completely dried out. This step is the soul of the dish.
Combine: Add the fried dark herbs to the lamb pot. Add pierced dried limes and enough water or stock to just cover. Bring to a boil, then reduce to a very low simmer.
Slow Braise: Cover and simmer for 1.5–2 hours, stirring occasionally, until the lamb is completely tender.
Add Beans: Add kidney beans. Cook uncovered for 20–30 minutes until the broth reduces to a thick, deeply coloured stew. Taste and adjust salt.
Serve: Ladle over saffron rice. Place a dried lime on top of each bowl for presentation.
Cooking Tips
The Herb Frying Step: The herbs must be fried until very dark and aromatic. Under-fried herbs produce a raw, grassy flavour. Do not rush this step.
Dried Persian Limes: These are essential. Find them at Middle Eastern and Persian grocery stores. Pierce them so the broth penetrates the interior.
Time: Ghormeh sabzi genuinely improves with time. Make it the day before serving.
