Description
A quintessential, hyper-refreshing Chinese cold starter. Cracking the cucumbers open creates jagged, irregular edges that absorb a pungent, intensely savory, and wonderfully tart dressing powered by raw garlic, Chinese black vinegar, and aromatic sesame oil.
Presentation & How It's Eaten
Served chilled or at room temperature in a shallow bowl, deeply glossy from the dressing and heavily speckled with minced garlic and optional chili flakes. It is eaten with chopsticks as a palate cleanser between hot, heavy courses.
Ingredients
2 large English cucumbers (or 4 crisp Persian cucumbers)
1 tsp coarse sea salt (for sweating)
The Tangy Dressing:
4 cloves garlic (finely minced to a paste)
1.5 tbsp Chinese black vinegar (Chinkiang)
1 tbsp light soy sauce
1 tsp granulated sugar
1 tbsp pure toasted sesame oil
1 tsp chili oil (optional, for a spicy kick)
1 tsp toasted sesame seeds (for garnish)
Step-by-Step Directions
Smash the Cucumbers: Wash the cucumbers and trim off the ends. Lay them flat on a cutting board. Take a heavy chef's knife or a rolling pin and firmly smack down along the entire length of the cucumber until it cracks open and splits lengthwise.
Chop: Cut the fractured cucumber pieces diagonally into bite-sized, 1-inch chunky wedges.
Purge Excess Water: Place the cucumber chunks into a colander, toss them thoroughly with the 1 teaspoon of salt, and let them drain for 10 minutes. This draws out excess water to ensure they stay incredibly crisp. Pat completely dry with a paper towel.
Whisk Dressing: In a medium mixing bowl, whisk together the minced garlic, Chinese black vinegar, light soy sauce, sugar, sesame oil, and chili oil until the sugar is fully dissolved.
Toss: Add the dried, smashed cucumber pieces directly into the bowl with the dressing. Toss vigorously so the dressing fills all the internal cracks of the cucumbers.
Chill and Serve: Transfer to a serving dish, scatter the toasted sesame seeds over the top, and serve immediately, or let it chill in the refrigerator for 10 minutes before serving.
Cooking Tips
Why Smashing Works: Never just slice the cucumbers with a clean knife. Slicing leaves smooth, sealed surfaces that cause the dressing to slide right off. Smashing creates a rough, porous texture that locks in the savory garlic-vinegar dressing beautifully.
