Country of Origin

France (Brittany region)

Description

Galettes de Sarrasin are the savory, rustic cousins of sweet French crepes, native to Brittany where the wet, cool climate was historically ideal for growing buckwheat (sarrasin). Made with 100% gluten-free buckwheat flour, water, and salt, the batter is fermented briefly to develop a signature nutty, slightly sour flavor. The traditional filling is the Complète: ham, melted Gruyère cheese, and a sunny-side-up egg nestled in the center.

Presentation & How It's Eaten

The galette is cooked until crispy and speckled ("lace-like") on the bottom. The sides are folded inward to form a neat square, leaving the golden egg yolk visible in the center. It is eaten hot off the pan with a fork and knife, traditionally washed down with dry Breton apple cider served in small ceramic bowls.

Ingredients

  • For the Galette Batter:

    • 250g buckwheat flour (100% pure)

    • 1 large egg

    • 500ml cold water (or 250ml water + 250ml cold cider/beer)

    • 1 tsp salt

    • Lard or unsalted butter (for greasing the pan)

  • For the "Complète" Filling (per galette):

    • 1 thin slice of high-quality boiled ham

    • 50g (approx. 1/2 cup) grated Gruyère, Comté, or Emmental cheese

    • 1 large egg

    • Melted butter for brushing

Step-by-Step Directions

  1. Whisk the Batter: In a large bowl, combine the buckwheat flour and salt. Make a well in the center and add the egg. Gradually whisk in the cold water in a steady stream, beating vigorously for 3 to 4 minutes to aerate the batter and develop a smooth, pourable consistency. Cover and let rest in the refrigerator for at least 2 hours (or overnight).

  2. Heat the Pan: Heat a large crepe pan, cast-iron griddle, or non-stick skillet over medium-high heat. Grease the surface lightly with a paper towel dipped in lard or melted butter.

  3. Pour and Swirl: Pour a ladleful of the cold batter into the center of the hot pan, immediately tilting and swirling the pan to spread the batter into a paper-thin, even circle. Cook for 2 minutes until the edges turn dry, brown, and begin to curl up.

  4. Add the Egg and Fillings: Carefully flip the galette over. Immediately crack an egg directly onto the center of the crepe. Use the back of a spoon to gently spread the egg white over the surface, being careful not to break the yolk. Sprinkle the grated Gruyère cheese around the yolk, and lay the slice of ham over the cheese.

  5. Fold and Crisp: Cook for 2 to 3 minutes until the cheese is completely melted and the egg white is set. Fold the four outer edges of the galette inward to form a square envelope, framing the sunny-side-up egg yolk in the center.

  6. Serve: Slide the hot galette onto a warm plate. Brush the folded edges with a little melted butter for a glossy shine and extra crispiness, and serve immediately.

Optional

  • Goat Cheese & Honey: Swap the ham and Gruyère for fresh goat cheese, walnuts, and a drizzle of honey for a sweet-savory Brittany variation.

  • Smoked Salmon & Crème Fraîche: Fill the cooked, warm crepe with smoked salmon slices, a dollop of cold crème fraîche, and fresh chives right before folding.

  • Prevent Sticking: Ensure your pan is exceptionally hot and lightly greased before pouring each galette; buckwheat flour lacks gluten, making the crepe delicate and prone to sticking if the pan is cold.

Cooking Tips

  • The Air Beat: Beating the batter vigorously with a whisk in step 1 is vital. Since buckwheat has no gluten to hold it together, incorporating air bubbles into the wet batter is what creates the characteristic lace-like holes (les yeux) on the crepe's surface when it hits the hot pan.

  • The Ice-Cold Liquid: Always use ice-cold water (or a cold beer/water mix). The temperature contrast between the freezing batter and the sizzling hot pan is what creates the beautifully crisp, shatteringly light edges.
