Origin

  • Region: Coastal Italy (Universal)

  • Historical Context: A standard dish across every Italian port town, designed to showcase the daily catch from local fishing boats.

Description

A light, golden medley of fresh seafood—usually rings of tender squid, sweet whole shrimp, and tiny local whitebait—dusted simply in fine semolina flour and deep-fried until shatteringly crisp.

Presentation

Piled high into a mountain inside a wide paper cone or on a platter lined with brown butcher paper to absorb excess oil. Serve immediately with fresh lemon wedges; no tartar sauce or heavy condiments are allowed.

Ingredients

  • 400g fresh squid (calamari), cleaned, tubes cut into 1/2-inch rings, tentacles kept whole

  • 300g large shrimp, shells on or off according to preference (tails left on)

  • 200g tiny small whole fish (like fresh anchovies or smelts), cleaned

  • 200g durum wheat semolina flour (semola rimacinata)

  • 1 liter high-heat oil (like peanut or sunflower oil) for deep frying

  • Fine sea salt

  • 2 fresh lemons, cut into wedges

Step-by-Step Directions

  1. Drying the Seafood: Wash all the seafood thoroughly under cold running water. Spread the squid rings, tentacles, shrimp, and small fish out across a baking sheet lined with double layers of paper towels. Pat the tops completely dry; any moisture left behind will create steam, making the crust soggy.

  2. Heat the Oil: Pour the frying oil into a deep, heavy pot or deep-fryer. Heat until it reaches exactly 180°C (350°F).

  3. Dredge in Batches: Place the semolina flour in a wide, shallow bowl. Toss a handful of the dried seafood into the flour, coating every crevice thoroughly.

  4. Sift Excess: Lift the coated seafood and shake it vigorously inside a fine-mesh sieve or colander to remove all loose, powdery flour before it hits the pot.

  5. Flash Fry: Carefully drop the seafood into the hot oil in small batches to avoid crowding the pan. Fry for 2 to 3 minutes maximum. The semolina coating should turn a light straw-gold color—not deep brown. The squid rings should remain tender.

  6. Drain and Serve: Use a slotted spoon to transfer the fried seafood to a plate lined with fresh paper towels. Dust immediately with fine sea salt while hot. Repeat with the remaining batches. Pile into a serving dish and surround with lemon wedges.

Optional Variations

  • Fritto Misto di Terra e Mare: Include thin matchsticks of zucchini and yellow bell peppers alongside the seafood in the flour dredge and fry them together.

Cooking Tips

  • Using durum wheat semolina flour rather than regular all-purpose flour creates a crispier coating that stays crunchy longer and does not absorb excess oil.
