Description

The ultimate chocolate-lover's indulgence, also known as chocolate lava cake. It features a rich cake exterior that masks a perfectly warm, molten, liquid-chocolate center that oozes out beautifully when cut open.

Presentation & How It's Eaten

Served hot immediately out of the oven. Carefully unmolded onto dessert plates, dusted with cocoa powder, and accompanied by vanilla ice cream to balance the hot chocolate core.

Ingredients

  • 100g high-quality dark chocolate (chopped)

  • 80g unsalted butter

  • 2 large eggs plus 2 egg yolks

  • 50g sugar

  • 40g all-purpose flour

  • 1 pinch of salt

Step-by-Step Directions

  1. Melt: Melt the chopped dark chocolate and butter together in a heatproof bowl over a pan of simmering water. Stir until smooth, then cool slightly.

  2. Whisk Eggs: In a separate bowl, vigorously whisk the whole eggs, egg yolks, sugar, and salt together until thick and pale.

  3. Combine: Fold the melted chocolate mixture into the eggs. Sift the flour over the batter and gently fold it in until just incorporated.

  4. Prepare Ramekins: Heavily butter 4 individual ramekins and dust the insides with cocoa powder, tapping out any extra.

  5. Bake: Divide the batter among the ramekins. Bake at 200°C (400°F) for 10–12 minutes. The edges should look firm, but the very center should still jiggle slightly.

  6. Unmold: Let sit for 1 minute, then carefully invert each ramekin onto a small plate to release the cake.

Optional

  • Center Surprise: Push a small square of white chocolate or a dollop of salted caramel into the center of the batter before baking.

Cooking Tips

  • Watch the Clock: Oven temperatures vary wildly. Start checking at 10 minutes; baking even 2 minutes too long will cook the center completely through, turning your lava cake into a standard muffin.
