Description

A traditional Kosovar layered pancake dish made by layering thin crepe-like batter with sour cream and kaymak sauce, baked layer-by-layer under a broiler.

Presentation & How It's Eaten

Served hot or warm at room temperature, cut into triangle shapes, served alongside pickled vegetables, honey, or feta cheese.

Ingredients

  • 4 cups all-purpose flour

  • 5 cups water

  • 1 tsp salt

  • 1.5 cups kaymak (or clotted cream)

  • 1.5 cups sour cream

  • 1/2 cup vegetable oil

Step-by-Step Directions

  1. Make Batter: Whisk flour, water, and salt together until a thin, smooth batter forms (similar to crepe batter).

  2. Make Cream Coating: In a separate bowl, whisk kaymak, sour cream, and oil together until combined.

  3. Layer Batter: Grease a large round baking tray. Ladle rays or stripes of batter from center outward, leaving gaps. Broil under high oven broiler for 3–5 minutes until brown.

  4. Brush Cream: Brush roasted batter with sour cream/kaymak mixture.

  5. Repeat Layers: Ladle next layer of batter into previous gaps, broil again, brush with cream, and repeat this process for 2 hours until batter is used up.

Optional

  • Sweet Dip: Serve with honey or berry preserves.

Cooking Tips

  • High Broiler: Heat oven broiler to high; flipping heat onto individual top layers replicates the traditional sač cooking lid.
