Description

A stunning, nutrient-dense soup featuring a rich, milky-white broth that looks like cream but contains zero dairy. A fresh fish head is intensely pan-seared to develop deep flavors, then hard-boiled with ginger and soft tofu cubes until the fats and collagens emulsify beautifully.

Presentation & How It's Eaten

Served hot in a wide, shallow pot or tureen with the golden fish head split open at the center, surrounded by pristine white cubes of soft tofu and fresh cilantro sprigs. Diners use chopsticks to pick out the incredibly tender cheek and collar meat while spooning up the rich broth.

Ingredients

  • 1 large, ultra-fresh fish head (such as Carp, Salmon, or Sea Bass, split in half down the center)

  • 1 block soft or silken tofu (approx. 300g, cut into 1-inch cubes)

  • 5 thick slices fresh ginger (skin-on)

  • 2 scallions (tied into a neat bundle, plus extra chopped for garnish)

  • 5 cups boiling water (absolutely crucial)

  • 2 tbsp vegetable oil (for searing)

  • 1 tbsp Shaoxing rice wine

  • 1 tsp salt (to taste)

  • 1/4 tsp ground white pepper

Step-by-Step Directions

  1. Clean Fish Head: Wash the fish head thoroughly under cold water. Scrape away any remaining blood along the backbone and remove the gills completely (gills cause intense bitterness). Pat the entire head bone-dry with paper towels to prevent splashing in oil.

  2. Sear Deeply: Heat the vegetable oil in a large wok or deep pan over high heat until smoking. Lay the fish head pieces in skin-side down along with the ginger slices. Sear for 3 to 4 minutes without moving, then flip and sear the other side until beautifully golden-brown.

  3. Deglaze: Splash the Shaoxing rice wine around the edges of the sizzling pan to flash off any fishy aromas.

  4. The Milky Explosion: Pour the 5 cups of boiling water directly over the screaming-hot fish head. The liquid will instantly erupt into a rolling, vigorous boil. Drop in the scallion bundle. Cover tightly with a lid and keep the heat on medium-high for 15 minutes.

  5. Add Tofu: Uncover the pot. The broth should now be an opaque, creamy milky-white. Remove and discard the spent scallion bundle. Slide the soft tofu cubes gently into the soup and lower the heat to a gentle simmer for another 8 to 10 minutes.

  6. Season: Stir in the salt and white pepper gently so you don't break the fragile tofu cubes. Pour into a large bowl, garnish with chopped scallions or cilantro, and enjoy hot.

Cooking Tips

  • The Secret to Milky Broth: Two things are required to achieve that rich, milky color without dairy: you must sear the fish in oil to create fat molecules, and you must add boiling water while keeping the stove heat high. The violent, rolling boil acts like a blender, physically forcing the oil, gelatin, and water to emulsify into a creamy white liquid. Adding cold water collapses the process.
